Disgustingly Rich Brownies
Yield: 16 brownies
Ingredients:
2 cubes (1 cup) butter
3/4 cup cocoa powder
2 cups sugar
4 eggs
1 teaspoon vanilla extract
1-1/4 cups flour
1/4 teaspoon salt
1/2 cup chopped walnuts (optional)
Preparation:
Preheat your oven to 350 degrees, then smear the inside of an 8 or 9-inch baking pan with shortening.
Melt the butter over a low heat. Watch it. It’s easy to burn.
In your mixing bowl, stir the cocoa and sugar together. Then stir in the melted butter. Add the eggs and vanilla, and stir again. Now add the flour and salt, and mix just until smooth. Not too much. (If you’re adding walnuts, now’s the time.)
Scrape the mixture out into the greased pan and spread out in an even layer.
Bake in a 350-degree oven until the brownies just begin to pull away from the sides of the pan (or until you can stick a toothpick in and pull it out with no batter sticking to it). Takes about 60 to 65 minutes. Let cool before cutting.

Mississippi Mud Pie
A fellow engineer gave me this recipe twenty-three years ago. Since then, I’ve seen several versions of this dessert, served in a number of chain restaurants. None come close, in flavor and texture, to this recipe.
Ingredients:
Mud Pie
2 cups all purpose flour 1½ cups pecans, chopped
2 cups sugar 1 teaspoon vanilla extract
¼ teaspoon salt 1 cup shredded coconut
½ cup cocoa 8 ounces unsalted butter
2 large eggs 2 tablespoons half and half
Topping
16 ounces bag miniature marshmallows
Chocolate Butter Cream Frosting
16 ounces confectioners' sugar
1/3 cup cocoa
dash salt
2 ounces unsalted butter, melted
½ teaspoon vanilla extract
½ cup half and half, cold (approximately)
Preparation:
Mud Pie
In a bowl, beat the butter, sugar, eggs, half and half and vanilla. Add the cocoa and salt and gradually sift in the flour while beating the batter. Blend in the nuts and coconut. Pour into a greased and floured (or non stick) cake pan. Bake at 350ºF for 30 to 40 minutes. Remove and turn oven to broil. Cover the top of the mud pie with the miniature marshmallows. Set on the broiler rack for 30 to 45 seconds monitoring constantly, until the marshmallows just begin to turn a light brown. Remove immediately, and allow to cool.
Frosting
In a bowl, blend together the sugar, salt and cocoa. Add the vanilla, and a small amount of the half and half. Begin to mix, adding half and half until a moderately stiff frosting is obtained. If too stiff to spread, add a bit more half and half. Spread over the marshmallow topping. Serves 12.

Double Chocolate Brownie Recipe
This brownie recipe is made with chocolate and chocolate chips, along with pecans or walnuts, if you want.
1/4 cup butter
3/4 cup sugar
1 teaspoon vanilla
1/4 cup corn syrup
2 eggs
2 ounces unsweetened chocolate, melted and cooled
1 cup all-purpose flour, sift before measuring
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 cup chocolate chips
1/2 cup chopped pecans or walnuts, always an option
Directions:
Cream together butter and sugar until fluffy. Add vanilla and syrup and continue beating. Beat in eggs and cooled chocolate. Into a separate bowl, sift dry ingredients. Stir dry ingredients into the batter. Fold in chocolate chips and pecans. Spread brownie mixture into a greased and floured 9-inch square baking pan; bake at 350° for 20 to 25 minutes. Cut brownies into bars.
