Well, I cook spaghetti with home-made meatballs! Nothing special with regards into preparing the sauce, just use lots of olive oil - anyway, it's good for you! It's the meatballs that makes the difference!!! I hate pre-packed meatballs coz' it's not fresh & there's some funky smell to it - at least to me! It sure takes alot of preparation, but it's all worth it coz' there are no left-over!!!

Roquefort Pear Salad


"Tangy Roquefort blue cheese, fruity sliced pear, creamy avocado, and crunchy candied pecans are all pulled together with a mustard vinaigrette."

INGREDIENTS:
1 head leaf lettuce, torn into bite-size
pieces
3 pears - peeled, cored and chopped
5 ounces Roquefort cheese, crumbled
1 avocado - peeled, pitted, and diced 1/2 cup thinly sliced green onions
1/4 cup white sugar
1/2 cup pecans
1/3 cup olive oil
3 tablespoons red wine vinegar

1 1/2 teaspoons white sugar
1 1/2 teaspoons prepared mustard
1 clove garlic, chopped 1/2 teaspoon salt
fresh ground black pepper to taste

DIRECTIONS:
1. In a skillet over medium heat, stir 1/4 cup of sugar together with the pecans. Continue stirring gently until sugar has melted and caramelized the pecans. Carefully transfer nuts onto waxed paper. Allow to cool, and break into pieces.
2. For the dressing, blend oil, vinegar, 1 1/2 teaspoons sugar, mustard, chopped garlic, salt, and pepper.
3. In a large serving bowl, layer lettuce, pears, blue cheese, avocado, and green onions. Pour dressing over salad, sprinkle with pecans, and serve.

My wife and I are starting a new $ saving idea, which is to prepare our lunches for the work week on Sunday.

We made Mexican bake, Humas which is good. And out of things we grew in our garden we made Taboli (which turned out great)!

Unfortunately, our breakfast parfay was awful, the yogurt we used was WAY to strong and cultured, all that sliced fruit ruined.

Our daughter brought us over the most delicious food on Sunday,she made boneless chicken breasts that she marinaded in pineapple juice,garlic and ginger,then my son in law who grills like Bobby Flay,grilled them to perfection. She also made grilled fresh corn on the cob,you rub the ears with olive oil and fresh ground pepper and again my son in law grilled them for 8 minutes,there was a fresh field green salad with grape tomatoes and goat cheese....with pineapple vinerertt.dressing......for desert there were home made sugar cookies......lol Ive taught her well....Shes an even better cook than I am

I had 38 beers, 12 Taco Bell burritos, 2 large pizzas from Dominos. I also have diarrhea now.

I bought shrimp that were already pre cooked, all i had to do was put em in the oven for 11 minutes, add some ketchup and enjoy, mhhhhh....
