A glass of wine was served with each course.

It begins with an appetizer. Then a salad, then soup, entree and finally desert. Often a sorbet is served between courses to cleanse the pallet. Sometimes in Russian service there is a fish course. Sometimes coffee is served after the meal.

Pretty much anything if you order a five course "taster menu" - four small starter sized dishes and a dessert would be the norm for that. Otherwise, I'd expect:

Starter
Fish (or meat) course
Amuse-bouche to clean palate

Dessert/Cheeseboard

Italian:

...spread over about four hours :)

5 - Aperitif (although I think this is the french word for starters so don't quote me on the exact word) / also known as coffee and choccies or cheese and biscuits

Soup, salad, meat and veg, dessert, cheese. The French kings banquets went up to 20 courses with all manner of produce: meat, fish, poultry, fruits and pastries, plenty of wines to match the courses. Look at Larousse Gastronomique under heading banquets , its a fun read.
