Scallops are the muscle that acts like a hinge to hold two halves of that bi-valves shell together. Today, scallops are not what you get. Much of what is on the market (especially the small ones) are punched out of manta-ray wings. Tastes the same though.

Big clam(whereby sometime you can find pearls inside) from the sea,when the clam open and close by means of the muscle attached on both sides of the shell,the muscle when freshly remove is call fresh scallops(white in colour) and when dried is call dried scallops(yellow colour)
