I have noticed that when a woman is attracted to someone, she will begin to groom herself. So if you are talking to a woman and she begins to run her fingers through her hair or caress herself, she probably likes you on some level.
Another way to tell is simply to ask.

She tells you. If she's too shy to do that she may smile at you a lot, touch your arm, or shoulder, find things to talk to you about, ask questions about your likes and dislikes, etc...

body language! it says alot. when i'm interested in a guy, my posture improves, suck it in, chest is more out there, tend to touch the guy. shoulder, leg while talking to him. some people tend to smooth their hair more. if she tells you she likes ur cologne (she's not just sniffin your cologne, she's sniffin ur pheromones). she looks very interested in what u are saying. will also touch your hands, and remember stuff you said.
