No question component is best. Progressive scan MAY better if your TV will accept it. If your TV accepts interlace and converts it to progressive internally (as all fixed-pixels displays do), you have to decide which does a better job of de-interlacing (TV or DVD). Do not automatically assume that the DVD player conversion is better (images from the DVD come off as interlaced and are converted inside the player). Try both ways, (interlace or progressive from the DVD player) and see if you can tell the difference. The thing to look for in judging: moving objects with well-defined edges, preferably diagonal lines. Poor de-interlacing will show breaking-up of the edges and "jaggies". Theoretically, the DVD should to better, but it is not alway true.

As far as cables are concerned, don't get the cheapest kind (RCA or no-name brand); go to a good electronics store (Magnolia, e.g.) and get reasonably-priced cables. Don't go for the very high priced exotic cables.

Component is by far the best choice of the ones you listed above. If you would have had HDMI then I would have said that but of the ones you listed component is best. Progressive scan is just a part of the dvd player and depending on the quality of your tv, projector etc. it may have progressive scan also.
I would test it out and see which one it is better using. Turn it on at the dvd player and see what the picture is like. Then shut it off and check again. See if you notice any difference in picture quality. If not then it is your choice of whether to have it on or not.
