Tomorrow or Tuesday, I'm going to follow some of my fellow Yahoo! Answers's advice and ask a girl I like out to lunch (or at least a snack), and there we'll talk about our interests and whatnot. I have that covered, but here's my question ... what do I do next? How can I present myself at the end of lunch? Invite her to another lunch or what? Or is it just best to have the balls to say 'I like you'? Btw, if it helps, we've known each other for about three weeks, chat everyday in class (generally not about class material) and get along very well.

It depends on how well lunch goes. If you don't get a vibe that she is into you, then ask her out to lunch again. If you can tell she likes you, tell her you really like being with her and let her dictate how the rest will go.

Yes, of course. There is nothing against saying that you like her, maybe also tell her why you're impressed by her.
If I get you right, the situation sounds promising. So there is nothing against asking her for a date. Could be a weekend daytime date if you know something nice to do. Another lunch is of course the safe way, but why would you keep things dragging on so long without letting anything happen :)

Providing that your lunch goes well, ask her out again for a repeat and tell her that you are interested in her. Be straightforward and honest regarding your intentions. She will appreciate it and will be flattered. All the best to you!

um, dont actually say that u like her unless ur pretty sure she feels the same. it might scare her. I think after the lunch u should just say, "i had a lot of fun with you today, do u wanna hang out again sometime?" or sumthin like that, she'll probly say yes

just tell her that 'we should definatly do this again sometime' and be honest with her, because honesty is very important, so if youve got something to say to her, say it.
