All of the above answers are good. It is also for the same reason that you use power strips at home, it allows all of your devices to plug into one, centralized power source rather than to have wires running every which way.

It makes so you dont wrap 50 seperate wires around your battery post to power all your systems. A bus bar gives you an organized way to tie into your battery or power source.

Its mainly because it would be really complicated and confusing to have dozens of extra ground wires running through the plane. It keeps everything organized.
