Do guys think a girl is not relationship material if she has sex with them in the first few dates? Even if they want sex from her? Does something shift in their mind about her if she does?

I'm well aware that an undetermined portion of the male population has these perspectives, in which case this "shift" in their minds (that you describe) probably does occur as a result or her having slept with them too quickly to be considered a "virtuous" woman. ( And as a result, she is excluded from being considered relationship material). But there is also this other segment of the male population, (their numbers also undetermined), for whom these perspectives in no way apply. As a member of that latter segment, I am unable to speak with any credibility to the point.

when you are grown up you will want to be able to walk down your street with your head held up high not asahmed of anything you have done and choices you have made
