A Champagne glass is made to have an imperfection at the bottom of the glass. This imperfection stimulates bubbles and creates that never ending stream of bubbles from the bottom of the glass. Additional bubbles are created by microscopic dust in the glass - meaning that you may get better bubbles simply rinsing your glasses rather than washing them. : )

It is because of the method in which the carbon dioxide was introduced. Coca-cola, sodas, sparkling water and cheap fizzy wines have carbon dioxide pumped into them. When they are opened the gas quickly dissipates in large bubbles.

The Champagne methode creates carbon dioxide by starting a small second fermentation in a sealed bottle of still wine. A by product of fermentation is carbon dioxide. Because the bottle is sealed, the gas cannot escape and is trapped in the wine.

When the wine is poured the gas starts escaping by forming bubbles. Note the bubbles are tiny -- that is the sign of a champagne method wine. The bubbles last longer and there are more of them than in sodas because there is more carbon dioxide. That is why a Champagne bottle is made of heavy thick glass and the cork is held on by a wire cage -- there is as much pressure inside that bottle as in the tire of a bus. (unlike sodas in a thin plastic bottle with plastic cap.

It is carbonated. This means that it has dissolved carbon dioxide in it. When it opens, it starts to fizz out. This happens in carbonated water, soda, beer, champagne and sparkling wine.

But eventually, all the carbon dioxide will fizz out, and it won't bubble anymore.
