Number one thing whatever the methods is to turn the racks over and insert a sharp knife under the skin covering the back. If you do it near an end you should be able to grab it and just peel it off. The most common method if you don't have a smoker is to fashion some foil in a roasting pan so you can stand them up on the side, spice them up, cover them up tight with some water and or sauce and cook them really slow until they are tender but not falling apart. Most restaurants use this method or a gizmo that does the same. Then when you need them you can just put them on the grill and put rub or sauce and coat them properly as they are already cooked. Sure smoking will get you the tastiest but this requires a lot of work and timing to get just right.

Remove the membrane. Use a dry rub. Smoke with apple wood. Slather on BBQ sauce at the end and eat right away.
Go to www.virtualweberbullet.com if you really want to learn how to smoke babybacks. There's a recipe there called The Best Ribs In The Universe. And they are.

I par boil my ribs first with two bulbs garlic in water then add one jar of apple sauce. Boil till kinda tender. About 2hrs. Remove from water and place in deep pan cover with your favorite bb'q sauce and put the lid on. The'll be great and ready after you heat them up on the grill. (grilling is for looks only and to get them hot.
Enjoy!!

Well, first you take the baby................just kiddin, a dry rub is always better in my opinion, over indirect WOOD fire. Maybe some sauce in the last 10 minutes but no earlier or it'll burn. If you put any sauce with sugar in it on them too early it carmelizes, then burns, no good. See whatcha did, now ya made me hungry ;)
