Love it! After growing up in the mid west and then moving to Maine as a teenager I was introduced to seafood....and it was a love affair that has never ended. I became a good cook over the years and seafood is on the menu on a regular basis.
Steamed Lobster w/butter, mussels steamed in wine & garlic, fried Maine shrimp, shrimp scampi, sauteed scallops, fried clams, steamed clams, calamari, crabmeat sandwiches, haddock, and on and on...
One of my fave dishes I had for dinner tonight.
Baked stuffed Haddock with Crabmeat stuffing.
I'll share it with you....

For 2 people:

2 pieces of fresh haddock
6oz of fresh picked crabmeat
1 roll of Ritz crackers ,crushed(must be Ritz)
1 stick of Butter, melted
juice of 1-2 lemons
1 tsp onion and garlic powder
salt & pepper
splash of milk

In a 9x9 greased baking dish lay the haddock down, skin side down,( the thinnest part of the fish will wrap over top of stuffing later) Drizzle a TB of melted butter over the fish
In a bowel mix cracker crumbs, rest of melted butter, lemon juice, spices. Should form a moist stuffing. If too dry to form, add more lemon juice. Then gently stir in the crabmeat.
Form into into two mounds on top of fish. Cover with the "flap" of thinner fish end. Pour splash of milk into bottom of pan.
Bake at 350 degrees for 10 min. Ourstanding!
