OMG!!!! Well because u were fasting, your glucose levels get extremely high, meaning that WHATEVER you eat will be like double..... Its normal, after fasting cause glucose builds when there isnt any fat/nutrients in the body to burn... and glucose weighs more than fat so, you may not LOOK bigger, but your weight (and metabolism) is messed up.
What you can do is just eat normal 3 meals a day, thats about it... you may weigh more, but continue eating right and you will get back at your ideal weight
Believe me, i've done that and i regretted it!!

Well it is possible the scale you used is wrong either today or two weeks ago. Another possibility is you just used a different scale, and the legitimacy of them can vary. There are two more possibilities. It seems you have been eating very little, if you aren't eating around a thousand calories at least your body's metabolism is going to start slowing down, and therefore even though you are eating less calories, your lower metabolism is making you gain weight. This is not very probable, though, because usually if this happens you would still lose at least a little weight. The fourth and also unlikely possibility is you are eating too much. I doubt this, seeing as your diet seems to be very low on calories, but if you are cheating on your diet then this can be possible. A good rule of thumb is if you are feeling drained of energy and lazy than you are probably getting less calories then you need (which is good!) If you feel like you have plenty of energy than you probably are getting too many calories.

It would be almost impossible to gain 15 pounds in two days. You need a new scale. One meal a day is not good for losing weight, 5 is better as digestion burns calories, and fasting makes your body want to hold on to weight. You could try a colon cleansing too.

That isn't normal. I doubt you ate enough calories in 2 days to gain 15 pounds as it takes 3500 calories to make one pound. That would mean you had to eat 52,500 calories in two days - highly unlikely unless you ate several kegs of crisco.
This sounds like swelling/edema/retaining water. It is definitely something to go to the doctor about.
Also, just for the record make sure your scale isn't off. It is entirely possible it is broken or off balance.
