For example, when you make hot chocolate and you heat up the milk, it doesnt curdle or anything. However, when you leave milk out on the counter for too long, it spoils. I just think its wierd....?

This is a question of bacteria, in room temperature the bacteria which causes spoilage multiplies quit rapidly,however when you heat it up it actually kills the bacteria, and when milk is in the fridge it simply slows the reproduction of this bacteria. This concept is the same for all food.

When you heat up milk you are applying high heat for a short period. That kills bacteria in the milk that would eventually cause spoiling, and you generally use or drink it before it gets very cooled off. When you leave milk out, it is sitting at a temperature that bacteria like and multiply in easily, and if it stays out, they will cause it to spoil.

Like everything else, raw milk contains bacteria. It's pasteurized (heated to 160 F) before you buy it, which kills the good as well as the bad bacteria. Heating it again merely raises the temperature.

If you leave raw (unpasteurized) milk out at room temperature, the good bacteria go to work and it will soon sour. Sour milk makes great biscuits and pancakes.

If you leave bottled milk out, the good bacteria are gone; the bad bacteria take over and the milk spoils - i.e. it does not sour, it actually goes rotten.

I think it's the time period. When you heat milk, you heat it relatively quickly. When it sits out, the temperature rises slowly and that's when the milk spoils. I think its weird too.

Hot chocolate will eventually spoil. It isn't the heat, it is the lack of refrigeration.

for one thing, it has already been heated up once before you get it, if it has been pasteurized that is. And if you heat it up long enough it will form a curdled layer on top of it.

Because it kills whatever leathel organisms at that time safe for consumption.
When air hits it, there are a lot of bacteria that will cling on to the milk and, thus, spoit it.

because when you are heating it up, bateria really doesnt touch it and those that do, die quickly enough to not harm the milk. When it is left out, bateria gets in there and ruins it.

when you warm it up its just heating it but if u leave it out bacteria gets inside and makes it go bad

Think about it... it takes longer for it to spoil when you set it out. If you microwave it, it's done within a few seconds.
