Chicken Enchilada Casserole
Ingredients:
3 tablespoons butter, melted, or melted margarine
1 cup onions, chopped
1/2 cup green bell peppers, chopped
1 garlic clove, minced
1 1/2 cups cubed cooked chicken
2 cups French style green beans, (15 oz.)
1 cup green chili, chopped (4 oz.)
2 teaspoons flour
1 1/2 cups chicken broth
1 cup shredded Monterey Jack cheese
12 corn tortillas, (6 inch)
Preparations:
Saute onion, pepper and garlic in 1 tablespoon butter. Combine onion mixture with chicken, beans, and chilies; set aside. Over low heat, combine flour and remaining butter; stir in chicken broth and 1/2 cup cheese. Stirring constantly, continue cooking until sauce begins to thicken and boil. Remove from heat. Dip each tortilla into hot sauce to soften; fill each with 2 heaping tablespoons chicken mixture. Roll up. Arrange rolls in 9-by-13-by-2-inch baking dish. Combine remaining sauce with leftover filling; pour over rolls. Sprinkle with remaining cheese. Bake in 350-degree oven for 30 minutes or until heated through.
Makes 2 Servings.
Spanish Rice
Ingredients:
2 tablespoons butter
2 tablespoons yellow onions, chopped
1 cup rice, white, long grain
1/2 cup tomato juice
1 cup water
2 chicken bouillon cubes
3 dashes bottled hot pepper sauce
2 teaspoons chili powder
1 pinch black pepper
1 Roma tomato, chopped
2 tablespoons red bell peppers, chopped
2 tablespoons green bell peppers, chopped
Preparation:
In a saucepan that has a tight fitting cover, melt the butter and sauté the onions until soft. Add the rice and stir to coat the rice with butter, then add the tomato juice, water, bouillon cubes, pepper sauce, chili powder, and black pepper.
Stir to dissolve the bouillon cubes and bring to a boil. Once the liquid reaches a boil, reduce heat to its lowest setting, cover, and go away for 25 minutes.
Do not stir, do not look under the lid, do not worry !!
Once your timer goes off, remove the pan from the heat, lift the lid off quickly and throw in the tomatoes, and chopped peppers and put the lid back on quickly.
Do not stir, do not taste, do not worry !! Allow the rice to steam in the pan for 20 more minutes.
Now... If you didn't cheat and if you didn't worry, your Spanish rice should be perfect. Stir in the tomatoes and peppers and serve with a smile. If you did cheat...Well, Shame on you !!!
Grilled Peaches And Berries
Ingredients:
large ripe peaches
blueberries
brown sugar
lemon juice
Preparations:
Wash, peel and halve the peaches and remove the pit. Place each half on a double thickness of heavy-duty aluminum foil. Fill peach halves generously with fresh or frozen blueberries. Sprinkle 2 teaspoons brown sugar and 1 teaspoon lemon juice on each. Wrap securely. Cook on grill 18-20 minutes, turning once. Serve right out of the foil. Allow 1/2 peach per serving.

what a great daughter. Salmon is pretty easy to cook. Baste it with a butter, dill sauce ( it's in the grocery store by the seafood usually ), with some saffron rice ( comes in those small packets in the rice section of the store). Some asparagus will go nicely with that. And a really pretty looking salad ( and easy, too) ;
Romaine lettuce
Can of pear halves
8 0z. cream cheese
2 -3 tablespoons of milk
1 tablespoon lemon juice
2 tablespoons mayo or miracle whip
Place a couple of pear halves on a bed of romaine lettuce leafs, not too many leafs. Blend all other ingredients until smooth and if too stiff, use a little more milk until desired consistency. Put a good sized dollop on the pears. Chill for about 15 minutes.

Here's a menu that's easy to prepare, and looks impressive, like you slaved away. I lifted it from when i worked at a 5 star resteraunt.
Take some Fontina cheese, and some roasted red peppers (you can buy them in a jar) Grate the cheese, and smush in the red peppers to make a paste.
Use a small sharp knife to make a hole in a chicken breast, (small hole to the outside, and a big one to hold all the stuffing. Like a cave) and stuff in some of the cheese paste you just made.
Sprinkle some dried thyme on the chicken, then wrap the chicken in some Prochutto (three slices per breast)
Now put it in the oven to bake.
Take 5 spears of asparagus, break the wooden end off of one, then line the others up and slice them all off at the same point. sprinkle a little bit of lemon juice and sesame oil on them (NOT much of either. they're both strong and a few drops goes a long way) then wrap in one slice of Prochutto.
That's all for the veg, this one's ready for the oven too.
Finally, something starchy. Peel and boil some potatos, them mix in some salt and pepper, some garlic, (roasted if you have it, raw's good too) some whipping cream and some Chevere cheese, then mash away.
To present this like a resteraunt, use a ring mold or a tuna can that's had both ends cut off and been cleaned to shape the mashed poato into a "hockey puck" on the plate. Place the chicken breast on the plate, with the narrow end leaning on the potato, then place the asparagus on the other end of the plate, also leaning on the potato. If you have an herb garden, you can even take a sprig of rosemary and stick it in.
Voila, a resteraunt quality meal with not alot of effort.

That's a sweet idea you have! I don't know how much cooking experience you have, but there are endless possibilities for you. I'll give you some of my ideas:
1. Sandwiches. They are tasty, usually simple, and can be very pretty and classy to serve. I have made one on wheat bread with cream cheese and cucumbers. It's simple and tastes great, and it looks pretty. For that sandwich, double decker it and cut it into triangular pieces. If you think that sandwich is not for you, try turkey sandwiches with lots of tomato and lettuce. These sandwiches are easy.
2. Soups. Soups can go with sandwiches, making a complete meal. Soups are very easy to make and are delicious. Get a book from the library and try some soup making! I promise, it's not hard!! I would suggest a vegetable soup and have the soup go with sandwiches. It'll taste lovely.

4. Salads. Pretty and tasty, plus they are healthy. Make whatever kind of salad you desire. Be creative and garnish things with parsley or pepermint.

An easy dinner would be spaghetti and french bread with a salad. Your parents are going to appreciate your effort no matter what you cook for them. Make sure you light some candles and use the good china if your parents have any. Good luck to you and have fun cooking.

Anything with strawberries is romantic! Here's a very easy dessert that looks very appetizing as well - my family loves it. Good luck with your dinner!
Strawberry Angel Food Cake
1 storebought Angel Food cake, torn into bite sized pieces
1 (8oz.) package no fat cream cheese, softened
1 (12 oz.) container light whipped cream
2/3 cup powdered sugar
2 lbs. fresh strawberries, sliced
With electric mixer, mix together the cream cheese, whipped cream and powdered sugar.
In a large clear glass bowl, layer half of the cake, spread half of the cream cheese mixure over that, then half of the strawberries. Repeat layers, ending with strawberries.
Chill until ready to serve.

You want to give them a romantic dinner? Since you're turning on the heat, make sure you leave as soon as they're served. Go to the movies with a friend then spend the night. They'll want some "alone time" ;-)

U can cook some steak ,shrimp, and baked potato in the microwave.U get the steak and split the corners then season it with ''all-seasons''seasoning.then put it in a frying pan and cook on each side for 45 minutes .For the shrimp u put some butter and garlic in a satay pan and u take the shell of the shrimp and season it with rosemary ,garlic powder ,and all-seasoning.and satay them for 25 minutes.[make sure u spread them out].u put some potatos in a bag and tie the bag up and put it in the microwave and press the baked potatoe button .I f u don't have that button then cook it for 3 minutes and if it isn't soft put it back in for 2 more minutes.

Go Italian. Spaghetti. With or without meatballs, since you want simple, I say without. Make a nice green salad with lettuce, cucumbers, tomatoes, carrots....and garlic bread. To make it really nice, get a bottle of sparkling cider and light a couple of candles. It's really sweet of you to do this for your parents!

get two steaks season salt and pepper turn oven 350 cover with foil let it stay in the oven for45 min to an hour or till it get dark. turn over 30min. make a salad.
