1/2 c Shortening
2 1/4 c self rising Flour
1/2 ts Baking soda
1 1/4 c Buttermilk
Sift flour, and baking powder .
Add shortening to dry ingredients and,
using fingertips, lightly rub shortening and flour
together, occasionally tossing flour mixture so you
touch all particles of shortening with flour. When
mixture becomes lumpy begin adding buttermilk. Using fork, add buttermilk, lightly stirring to mix with dry
ingredients. Cover board or surface with dusting of
flour. Gather sticky mass of dough and place on
floured surface. Dust hands with flour and gently
knead dough, adding enough flour only to make dough
manageable. Pat dough with hands or roll with floured
rolling pin into round 1/2-inch thick. Using 2-inch
cutter, cut out biscuits and place touching each other
in 3 rows, in center of greased baking sheet. Place on
middle rack of 425-degree oven and bake 12 minutes, or
until lightly golden. Remove from oven and serve hot
or warm. Makes 19 (2-inch round) biscuits.

Buttermilk Biscuits
These biscuits are my favorite - the addition of yeast makes them much lighter than a regular baking powder biscuit.
Ingredients:
1 cup buttermilk
1/2 cup water
4 cups flour
2 teaspoons baking powder
1 teaspoon salt
1 package quick rising yeast
2 tablespoons sugar
1/3 cup shortening
2 tablespoons melted butter
Directions:
Heat buttermilk in a small pan on the stove, or in the microwave, until bubbles form around the edge. The buttermilk will curdle. Remove from heat and add water, set aside.
In food processor, combine flour, baking powder, salt, yeast, and sugar. Add shortening and whirl until mixture resembles coarse meal. Add buttermilk and whirl to mix in.
Knead the dough until smooth - if you have a large food processor you can knead in it, otherwise remove and knead about 5 minutes on a floured board.
On a floured board, roll out the dough to about 3/4 inch thickness. Use a floured cookie cutter (2 1/2 to 3 inch round) to cut out the biscuits. Place on greased cookie sheets, 1 inch apart. Prick tops of biscuits with a fork.
Cover biscuits with a cloth and let sit for 30 to 45 minutes. They don't rise too much at this point, but will rise more during baking.
Preheat oven to 400 degrees F. Brush the biscuits with melted butter and bake for 10 to 12 minutes until lightly browned. Serve warm.

I use either the one on the Bisquik box or the one on the cannister of Clabber Girl baking powder. Both good options, depending on what you have on hand. Go to your search bar and type in "biscuit recipes" and you'll have more info than you know what to do with.

When it comes to biscuits -- Pioneer Buttermilk Biscuit and Baking Mix is hard to beat! I have made them from scratch and from the mix -- the mix is good and quick and just as good.

Here's a couple of recipes I love and hopefully you'll love em too! Some are from a bisquit mix and have additions, other are straight from scratch.
Cream Cheese Bisquits
2 cups biscuit mix (suggested: Bisquick)
3 ounces cream cheese
Milk, to moisten
Flour
Preheat oven to 375 degrees F.
In a mixing bowl, cut cream cheese into biscuit mix until cornmeal consistency. Add enough milk to moisten. Place dough-like mixture onto floured surface and knead 2 or 3 times. Don't knead too much or your biscuits will be tough. Roll dough to desired thickness using a rolling pin and cut out with round cookie cutter. Place biscuits on a greased cookie sheet and bake until golden brown, approximately 15 minutes.
Garlic Cheese Biscuits
1 1/4 cups biscuit mix
1/2 cup grated sharp Cheddar
1/2 cup water
Garlic Butter:
1/2 stick unsalted butter, melted
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon dried parsley flakes
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
Combine the biscuit mix and cheese in a small bowl. Add the water and stir just until combined. The dough will be slightly moist. Drop the dough by tablespoonfuls onto the prepared baking sheet. Bake for about 10 minutes, until the biscuits are firm and beginning to brown.
While the biscuits are baking, make the garlic butter. In a small bowl, combine the butter, garlic powder, salt, and parsley flakes. Mix well. As soon as you bring the biscuits from the oven, brush them with the garlic butter using a pastry brush.
Southern Biscuits
2 cups flour
4 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons butter
2 tablespoons shortening
1 cup buttermilk, chilled
Preheat oven to 450 degrees.
In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.
Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that's life.)
Bake until biscuits are tall and light gold on top, 15 to 20 minutes.
Sweet Potato Biscuits
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon sugar
12 tablespoons cold butter
1 cup mashed roasted sweet potatoes
1/2 cup ground pecans
1/3 cup half and half
Preheat the oven to 450 degrees F. Grease a 1/2 sheet pan. In a mixing bowl, combine the flour, baking powder, baking soda, salt, and sugar together. Add the butter, and with your hands, work the butter into the flour mixture until the mixture resembles a coarse cornmeal. Stir in the sweet potatoes and pecans. Add the cream, a little at a time until a soft dough is formed. Lightly flour a surface. Place the dough onto the surface and dust the top with flour. Lightly press the dough out to 1/2 inch thickness. Using a 2 inch biscuit cutter, cut the biscuits into rounds. Place the biscuits on a greased baking sheet and bake for about 15 minutes or until the biscuits are golden brown.
Buttermilk Chive Biscuits
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup, plus 2 tablespoons buttermilk
2 tablespoons minced fresh chives
1 tablespoon butter or margarine, melted
Non-stick cooking spray
Preheat oven to 425-degrees. In a large bowl or food processor fitted with the metal blade, combine flour, baking powder, baking soda and salt.
In a small bowl, whisk together buttermilk, chives, and butter. Add mixture to dry ingredients and mix together (with your hands) or pulse in a food processor until a manageable dough forms.Transfer dough to a lightly floured surface and knead 1 minute. Roll dough out to 1/2-inch thickness and, using a biscuit cutter or upside-down glass, cut 8 biscuits (about 3 inches in diameter). Transfer biscuits to a baking sheet that has been coated with non-stick spray.
Bake 10 to 12 minutes, or until puffed up and golden. Serve warm.

try bisquick...its good and somtimes they have little recipes on the box so you can add things like cheese or spices
