My 40th came and went a LOOOONG time ago, but my family has a tradition that I absolutely loved over all of the birthdays. On someone's birthday, they don't work at being "mom" or "dad".
That means you fix her dinner or take her out (she chooses whether to go out or have you cook), you do the dishes even if they were left over from the night before, clean the house, do the laundry. Whatever would be her chores for that day are done for her by the family. She decides what to eat whether anyone else likes that dish or not. Chooses what to watch on TV. Turns off her alarm...... someone else gets up to get the kids to school and hubby to work if it needs to be done.
Birthdays at our house also start at midnight and go until midnight. We all start being "NICE" at midnight as the day turns to the birthday and have to be "NICE" for the full 24 hours. No arguing or asking favors or anything. The birthday person is King or Queen for the whole 24 hours and is waited on and treated extra special.
By the way, the King/Queen for the day rule also applies to the kids when it's their birthday. No chores. No school. Anything they want to eat they get. Whatever they want to watch on TV they watch. As late as they want to sleep in or late going to bed they want go is their choice.

I think a good formal dinner with the rest of the family and give her a card and if you have an old picture of you and her when you were a kid, put it in a nice frame with the card and flowers, she will love it because she can keep it forever and a good remembrance specialy if you get married and move from your house away from her.

If you want to make her present special, have it be a present you do together, like go to a park for a walk, then have breakfast.
Or give her a gift certificate for a bookstore, if she is a reader, then go with her to pick it out, and sit together at the coffee shop there..treat her.
Something like this, you will both remember.

Moms like a lot of stuff but not anything to work with in the kitchen.
Jewelry and bath stuff are great.

If you have enough money, something at a spa - a spa day would probably be the ultimate, but anything would be nice - like a back massage.

take her to the salon to get a pedicure/manicure
make her breakfast
do the house chores for her
wash her car and vaccum inside it
MAKE her a b-day card, notice i didn't say "BUY" her a card. she'd really appreciate a HANDMADE card.
cook her fave. dinner or take her out to eat to her fave. restaurant
whatever you do, don't mention her age to her.

manicure & a pedicure then lunch...
it's cheaper then a diamond bracelet and time is more valueable then any gift you could give.
or..maybe she likes diamonds?
