This is my favorite Cheesecake Factory dish!

The dish is very simple and should be easy to recreate. The ingredients are as follows:

Penne
Garlic
Olive oil
Roasted eggplant
Pine nuts
Kalamata olives
Sun-dried tomato
Broccoli
Peppers
Parmesan cheese
(Though I often ask them to substitute the peppers for artichoke hearts)
Just gather the ingredients cook your pasta and toss it all together. Other ingredients that I can guess on are salt and maybe they add some basil, oregano and/or parsley. Also be sure not to over cook the broccoli - lightly steam it and then give it an ice-bath to cool down and stop the cooking process.

I've eaten this at the restaurant many times. It doesn't have a red or white sauce - just olive oil. This dish is all about the vegetables.
