Grandma's Apple Pie
Incredibly delicious hot with vanilla ice cream or, an old Yankee touch, a slice of cheddar cheese.
6 cups peeled, sliced apples (Idared, Golden Delicious, Jonathan, Granny Smith)
1 tablespoon fresh lemon juice
1/2 cup sugar
1/2 cup firmly packed brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons butter
pastry for double-crust 9-inch pie
Preheat oven to 450°F.
Combine apples and lemon juice in mixing bowl. Combine sugar, brown sugar, flour, cinnamon and nutmeg; mix well. Pour sugar mixture over apples, and stir to coat. Spoon filling into pastry-lined 9-inch pie pan. Dot with butter.

Transfer top pastry to top of pie, trimming off excess. Fold edges under to seal, and flute rim. Cut slits, decorative or not, into top pastry for steam to escape.

Bake in preheated 450°F oven for 15 minutes. Reduce heat to 350°F, and bake for 45 minutes.

If you do not know, take the easy way. Buy some pre-prepared pastry. Butter a dish and roll out the pastry. Cover the dish. Peel and thinly slice some cooking apples. Place into the pastry. If you have any, sprinkle about six cloves on top of the apples. Add sugar to taste but sufficient to remove the bitter tang of the apples. Cover it with pastry. and crimp the edges with a fork. Puncture the top of the now pie in several places with the fork. Whip up an egg and paint the top of the pastry (not a must). Place in a preheated over at mark 190 and leave for about 45 minutes or until the pastry is browned. Serve with cream or better still, thick custard or ice cream............. enjoy.....

peel the apples (about 10), add a little bit of brown sugar and some raisins, tiny bit of brown rum. Let it soak for 15 minutes.
Dough: Mix self-raising flour with 2 eggs and some milk, add 2 teaspoons of sunflower oil. Work dough until it´s nice and soft.
Put apples in dough, cover with dough, make some stitches with a knife on top, so heat can evaporate. Good appetite.

Buy Green Granny Smith Apples...Peel them....Slice them, put some lemon juice on them to keep them from turning brown while you are doing other things......cook them in a little water, enough to keep them from scrotching......with cinniman and sugar and a small sprinkle of chili power (good trick to know) simmer until they are soft yet a touch of firmness. You should already have your crust prepared and rolled out (making the cust is another book) Put uncooked crust on the inside of the pie pan ...put your apples in the crust.....put your other uncooked, rolled out crust over the top and crease the two crust together until they are completely sealed. Brush the top with egg whites and sprinkle with sugar. Cooking tempature and length depends on elevation. Good Luck
