Pectin is what makes jam set. Some fruits are low in pectin and will not set properly, probably why there are a lot of "--- & Apple" jams out there (apple being high in pectin) You can buy commercially produced pectin if you don't want to add a pectin rich fruit.
There is a lot more info on the link pasted below.....

If you want to make actually jam then yes. You can make a preserve that you can freeze or refrigerate without pectin. Just crush about half the mulberries and leave half whole. Put mulberries and juice that they make when mashed in saucepan. Add sugar to taste. Heat over low heat until the sugar is completely dissolved. If this looks too watery at this point turn up the heat a little until you have a very thick syrup mixture. If too thick you can add just a touch of juice, water, whatever you prefer until you achieve a thick syrup. Thick syrup is determined by putting a spoon in the mix and if the liquid sticks to spoon you are where you want to be. Mix in rest of mulberries and then put into clean jars (use small ones) or into freezer bags.
This will keep in the frig for a few weeks-but will last in the freezer for several months. Just defrost before using. Good luck and have fun.

Pectin is required for any jam or jelly that you want to be firm. Otherwise you are just making syrup because it will be so thin you can pour it like kool-aid!

Not sure, but you could probably get by with adding some lemon juice and cooking it well.
