Makae sure the dough stays cold(use cold shortening and keep dough in the refrigerator between batches), make sure the cookie sheets are cooled off between batches(do not put dough on warm or hot cookie sheet), and roll the dough into balls before placing on the cookie sheet.

I have a friend who adds extra eggs to her cookie recipes. The eggs make the cookies fluffy. She adds 2 more than the recipe calls for... I've never tried it, but she always has the best cookies....

encorporate a small amount of rice flour into your mixture, about 1/4 of the flour, this will make your cookies fluffy and soft .

the easiest way i know is to use a yellow cake mix ! betty crocker is the best ! chill before use and roll equal size balls! space evenly and rotate your sheets, halfway through cooking ! that way you get even cooking. works geat and taste awesome !
