I can't imagine why the would use fish guts. Not really a tasty additive to beer....
As far as filtering goes, most beers are filtered through industrial-sized filters which look like old-style radiators or even an accordian.
Weihenstaphan is one (if not THE) oldest breweries in the world. Most brew meisters learn brewing here. I can't imagine that they would use fish guts.
BTW - the Reinheitsgebot from the year 1516 has nothing to do with the treatment of the beer (here the type of filtering, mainly because they couldn't filter in 1516), but rather only with the ingredients, barley, water and hops.

I think you mean Isinglass. It comes from the bladder of the sturgeon. It looks like mucus, probably is mucus - and it's used to clear the yeast from most beers and wines. If you don't fancy it ask for vegeterian beer or wine. They use something else, a type of clay sometimes. Actually, Isinglass looks a lot like semen, but you wouldn't know what semen looks like. Would you? lol

no....they may have used something like that to filter it years ago cause they have been around for over 1000 years but technology has advanced.
and they most certainly have not used it in the brewing process, something like that is not allowed to be added, by the german brewing code
