Because Europeans drew the first maps, and they put North on top. There is nothing up or down in the vaccuum of space in which the Earth is moving.

Because the North is upwards and South downwards just for reference.

And there is no such thing as top or bottom for Earth. Earth is virtually flat from a man's point of view.
