Cookie Ice-Cream Cake
1/4 cup butter or margarine
1/4 cup chocolate syrup, divided
1 quart chocolate ice-cream, softened
1 quart vanilla ice-cream, softened
44 chocolate chip cookies (chips ahoy works best)

Crumble up 25 cookies. Place them in a circular springform pan. You don't have to have a springform pan, but it works best. Pour the butter or margarine on top. Freeze for 15 minutes. Next, pour the chocolate syrup on the crust and get the rest of the cookies and make a border around the edge. Freeze for 15 more minutes. Get the vanilla ice-cream, and place on top of the crust. Smooth it out. Freeze for 25 minutes. Make a layer, and put the chocolate ice-cream on top of the vanilla ice-cream. Smooth it out. Freeze for 25 more minutes. Before serving, take it out for 10 minutes to thaw. Optional-Drizzle more chocolate syrup on top of the chocolate ice-cream for a fancier look.

my favorite desert is SO simple. get two cans of chopped pineapples and dump them in a bowl (no juice!), put about a cup of sugar into the bowl and a lot of shredded cheddar cheese (i use enough to coat everything). in a seperate bowl crumble those toll house crackers. melt some butter and completely coat the crackers. put the pineapple mixture into a baking pan and add the buttered crackers to the top. bake for about 15 minutes at 350 (depending how thick you made the mixture. just enough to heat the pineapples and melt the cheese). this is absolutely YUMMY and everyone will eat it up. it's also SO easy to make and you can't screw it up!

Busy Day Cobbler

1/3 cup butter
1 cup flour
1/3 cup sugar
2 tsp. baking powder
1/4 tsp. salt
2/3 cup milk
one large can sliced peaches with liquid
1/4 cup additional sugar
1 Tbsp cinnamon

Melt butter in 8 by 11 inch baking dish. In bowl combine flour, 1/3 cup sugar, baking powder, salt and milk. Pour over butter but do not stir. Over this pour sliced peaches (liquid included, but not all of it - I usually leave about 1 inch of liquid in the can, if you pour in all the liquid, it's too much)
Sprinkle peaches with additional sugar and cinnamon. Bake at 350 degrees for 45 minutes. Good served warm with ice cream.
