3 cloves garlic, minced
1/2 cup soy sauce
2 tablespoons vegetable oil
2 tablespoons ketchup
1 teaspoon dried oregano
1 teaspoon ground black pepper
1 (2 pound) flank steak or round steak
In a small bowl, mix together garlic, soy sauce, oil, ketchup, oregano, and black pepper. Pierce meat with a fork on both sides. Place meat and marinade in a large resealable plastic bag. Refrigerate 8 hours, or overnight.
Preheat grill for medium-high heat.
Lightly oil the grill grate. Place steak on the grill, and discard marinade. Cook for 5 to 8 minutes per side, depending on thickness. Do not overcook, as it is better on the rare side.

Chicken, chips (french fries) and peas. If it's hot where you are have cold chicken and replace the peas with a mixed salad. A nice drop of white wine would go well with that. But if you're having wine, no vinegar on the chips. Wine and vinegar -- just doesn't go together.The chicken would be nice barbecued with some barbecue sauce to dip your chips in. I've had dinner, I'm glad to say or this would make me feel hungry!

Hot and Spicy Garlic Chicken
Ready in: 30-60 minutes (including marinating time)
1/2 lb, small boneless chicken breast pieces
1 tablespoon garlic, chopped
2 teaspoons hot chilli powder
1&1/2 tablespoon tomato puree
salt to taste
1 teaspoon sugar
1/2 cup chicken stock
1 tablespoon cornflour
4 tablespoons cooking oil
1 teaspoon vinegar
2 tbsp, Bell Pepper cut into small pieces
1 tbsp, finely chopped Onion
1 tbsp, finely chopped Spring Onion (Scallions)
Marinade
1 Egg
3/4 tsp, Salt
1 tablespoon cornflour
1 tablespoon cooking oil
Marinade the chicken with all the marinade ingredients, and set aside for 30 min.
Heat 4 Tbsp oil in a wok and stir fry the chicken for 10 min over a medium heat.
Drain and set aside.
In the same oil add garlic and red chilli powder. Fry for 3 minutes and add tomato puree, bell pepper, onion and spring onion.
Stir fry for 3 minutes on high heat.
Add fried chicken.
Stir-fry and add salt, sugar and chicken stock.
Mix the cornflour in 1/4 cup water and add to chicken slowly, stirring continuously to thicken the sauce.
Finish with the vinegar. Serve with fried rice or noodles.
