Depends on your spam program, I use spambayes and with it all you have to do is go into your spam folder find the email, highlight it and click on recover from spam. I would think other programs would have this feature too.

Go to the bulk e-mail box, find the mail you marked accidentally, and send it to the inbox. Then mark it correctly.

If you use Yahoo! mail and after you select a mail as smap, go to Bulk map, mark that mail and select "Not Spam".
