You have to wait for them to cool. As they cool you will start hearing little pops. then after a while, you need to press down on each lid to make sure they sealed. If they did the lid will not move, if they did not seal there will be a little movement in the lid. Those you need to re heat.

Are you going exactly by the book? Right pressure, Right temp? Ususally when the jars are not sealing they are not pressured long enogh. You also may have to make adjustments if you live in a high altitude. ( that may be written in book in very small print somewhere. Also, the jars sometimes take a little time to seal after you take them out of the cooker. They will then make a popping sound. Each jar a little different time than the other. They don't seal in the cooker. If for some reason you don't have a book that came with the cooker, you can probably get online and search the manufaturer website and get one. Or just type in canning times for whatever you are trying to can. My e-mail address is lindagrijalva@yahoo.com. I would be happy to answer any questions that I can, as I have canned a long time. Means I'm ol huh! lol.
Good Luck and hope this helps!

They won't be sealed when you remove them from the canner (unless you leave them in until the canner cools naturally--when I'm canning 50 quarts of green beans, I don't have that luxury and must pop the petcock to release the pressure, then let the jars cool and seal on the counter).

If they've been stored in a hot storeroom or for several years (before you bought them!), the jars or rings might have made a permanent indentation in the soft layer that seals. It's generally best to remove the lids and store them separately (i.e., not on the jars, whether right side up or upside down.

As the jars cool the lids will pop down. They do not seal while hot.
