I'm not a chef, but I like veggies like broccoli, cauliflower, onions, and green peppers chopped up pretty small and mixed with cole slaw dressing.

They served my son raw broccoli with Queso dip (the cheesy dip with the salsa in it, you know?) at school one day. He hates raw broccoli, but he scarfs it like that.
I'm into salads these days. I buy the bagged salad kits, you know, and have been adding fruits and nuts to mine. Like chopped walnuts and little bits of mozzerella cheese, or an oriental salad and adding mandarin oranges segments and slivered almonds. Even my kids eat those.
Oh! I also saw on a foodbites commercial the other day they suggested rolling veggies up in a pita bread and making a veggie salad sandwich. Lettuce, tomatoes, sprouts if you like them, shredded carrots. I forget what else, but I imagine you could do just about anything.

Do you live where there's a Whole Foods? The one here has a raw food bar, and they have crackers, snacks, and main dish-type things that are mainly raw veggies and are not salad. If you can, check it out. Also, maybe they have a website?

ice Burg salad only has water in it, if its the leafy salad you like try spinach uncooked, char or endives. they have the most vitamins in them and help with staying in your body longer. raw veggies are better than cooked, vitamins stay in the veggies and take longer to digest. as for the dip, homemade is best and contain no preservatives.

raw veggies. be careful about what dip you're using because that might completely ruin the whole idea of eating raw veggies (too fatty or too high of cal). i love cucumbers with a lite italian dressing (YUM).

Personally, when I get tired of salad, I prefer a great big rib-eye steak smothered in onions and mushrooms, with garlic mashed potatoes, and fresh steamed veggies.

Get some pita bread and stuff the salad inside the bread and make a wrap.
Use what ever you want mayo, dip, or dressing.
