We believe in time and space because we base our reality on the proper functioning of both and we can measure them (quite accurately) so we know they exist. The funny thing about time and space is that people are always complaining that they do not have enough time or enough space, yet both are infinite.

Its not so much that we 'believe' in it as it is that we 'experience' it. We 'experience' it the way that we do because we are wired to experience it that way. Interestingly, there is no compelling reason to think that time 'exists' in any 'real' way, or that it even exists at all, apart from human consciousness.
Here are some of my favorite sayings about 'time':
"Time is nature's way of keeping everything from happening at once." ~ Unknown
"Time flies like an arrow; fruit flies like a banana." ~ Groucho Marx (I think)
"The sooner you fall behind, the more time you have to get caught up."
That last one I like the most, because it operates on two different levels. Looking at it one way, it is patently ridiculous... but contemplating it from another angle, it actually seems to make sense, in an odd and deeply disturbing way.

I have tried at great length to understand time. All I can discern is that it is merely entropy in action. As for space well I believe in it simply because it is observable.
