i haven't listed any recipes here...just a few tips on making casseroles.
beef casserole: always, always brown the beef in a non stick pan to 'seal' it before cooking. this ensures that most of the tasty flavour stays in the meat and keeps it juicy (or succulent, if you prefer that word)
chicken: boil up the carcass and then place the meat in with the 'broth' and discard the bones, skin and gristle. this gives you the tastiest base for both casseroles and soups.
most casseroles are cooked the same way...chop meat and/or veggies to roughly the same size to ensure even cooking. make sure the broth always covers the meat and try to use a lidded dish as it is easier to keep the food 'moist' whilst cooking.
ps if you're using onions it's much better if they're fried a little before adding to your casserole....this way they retain their flavour, which in turn flavours the stock, and they don't taste 'boiled'.

Easy, you put boned chicken, chopped and skinned in a saucepan, lots of vegetables, carrots, onions, chopped white cabbage, lentils (just a few and pre-soak for 24 hours), some mixed herbs out of Asda - teaspoon per person, a chicken stock cube crumpled up, and potatoes chopped finely or diced. Cover with water and cook until the chicken is really cooked and falling apart. You can do it in a casserole dish in the oven and check it now and again. Add a little water if it needs it. keep the heat low in both cases and cook for an hour or two. Personally, I use a pressure cooker and do it for 40 minutes - but I'm a guy and we understand the physics of cooking under pressure! lol

SQUASH CASSEROLE
2 cups yellow squash, sliced
1 cup carrot, grated
1 cup onion, diced
1 cup sour cream
2 cups seasoned croutons
2 tablespoons butter
In a 2-quart casserole dish, layer 1/2 of the croutons on bottom. Mix vegetables together with the sour cream and spread on top of the croutons.
Add the rest of the croutons then top with the butter. Bake at 350 F for 1 hour.

It's absolutely easy and fast. That's why most people make them.
A good one to try is ;
hashbrown casserole
1 bag of frozen hash browns
1 can cream of chicken soup
1 can cheese soup
1 small onion diced
about 3 cups cheese.
Stir all together with 2 cups of the cheese and ut in casserole dish. Top with remaining cheese and bake covered for about 45min. Take cover of for 10 minutes to brown top. Cool and enjoy!!
This is yummy, but sorry it's not all that healthy. For a healthier version try the lowfat chicken soup and low fat cheese.

Casseroles are the easiest thing to cook if you have plenty of time,of course you can do it in a slow cooker but as you have not got one of those you will have to do it in your main oven,i start mine about lunch time,it cooks all afternoon while i get on with other housework the delicious smell as it is cooking, we then eat at 4-00 or5-00 pm delicious .

CHICKEN CASSEROLE (HEALTHY ENTREE)
4 c. cooked chicken
1 bell pepper, diced
1 onion, diced
1 can Healthy Request cream of mushroom soup
1 (8 oz.) container low fat sour cream
2 ribs celery, finely diced
Saute onion, pepper and celery in skillet sprayed with Pam. Stir to keep from sticking. Mix chicken, vegetables, soup and sour cream together. Salt to taste. Pour into 2 quart casserole dish. Top with crushed corn flakes. May garnish with paprika and parsley flakes. Bake at 350 degrees for 30 minutes.

Just put your meat and veg in layers in a port, onions carrots, potatoes and leaks, peas etc. Stewing beef is the best or brazing steak. Make some rich gravy and pour over. Season with a little salt and pepper and put in oven on a very low heat for about 3 - 4 hours. about 90 degrees/mark 1/ or 2.
That's all it is to it.

put everything into a large heat proof pot ie chicken pieces any veg , pour in about half pint of stock made from a stock cube and hot water. place in oven on about 6 for a hour and there you go or get a casserole mix from shop and follow instructions.

TURKEY TETRAZZINI:
2 cups cooked turkey, diced
1/4 cup margarine or butter
1/4 lb to 1/2 lb. fresh mushrooms, sliced
1/4 cup flour
2 cups chicken broth
2 Tablespoons dry Cooking Sherry
1 cup evaporated milk
salt and pepper to taste
8 ounces cooked spaghetti, drained
1/2 cup parmesan cheese, grated
Melt margarine, add mushrooms and cook 5 minutes. Stir in flour. Add chicken broth, sherry and milk. Stir and cook until mixture boils and thickens. Season to taste. Remove from heat. In 2-quart buttered casserole, put alternate layers of spaghetti, turkey, and mushroom sauce; finishing with spaghetti. Sprinkle top with grated Parmesan cheese.
Bake at 400 degrees for 20 to 25-minutes or until bubbly. Note: you may substitute cooked chicken for turkey.
SPAGHETTI SUPERB:
1 lb. ground beef, browned and drained
1/2 cup onion, chopped and sauteed
1/4 cup green pepper, chopped and sauteed
2 Tablespoons oil
1 can Condensed Tomato Soup
1 can Condensed Cream of Mushroom Soup
1 can water (measured from soup can)
1 clove garlic, minced
1/2 lb. spaghetti, cooked and drained
1/2 cup shredded Sharp Cheese
In a large skillet, saute onion and green pepper in oil; add ground beef and brown until thoroughly cooked. Drain off grease. Add tomato soup, cream of mushroom soup, water and garlic to meat and heat. Stir in cooked spaghetti. Pour into large casserole dish and top with the shredded cheese. Bake at 350 degrees for 30-35 minutes or until the cheese has melted and is bubbly.
SPANISH RICE:
6 slices bacon; cooked, crumbled
1 1/2 lb. ground beef
1 medium onion, chopped
1 small green pepper, chopped (optional)
1/8 teaspoon garlic powder or 1 clove garlic, minced
4 cups tomato juice
1 cup uncooked regular white rice
1 teaspoon paprika
In skillet over medium-high heat, cook bacon, drain off grease and set aside on paper towels, cool and crumble into pieces. In same skillet brown the meat with onion, pepper and garlic until thoroughly cooked; drain grease. Stir in tomato juice, rice, paprika and bacon. Heat to a boil. Pour into 2-3 qt. greased baking dish. Bake at 350 degrees for 45 minutes or until liquid is absorbed and rice is tender.
