It's called caviar, but the type you put on crackers is probably the cheap imitation caviar.
The real caviar is incredibly expensive and it comes from the sturgeon fish and is harvested in Russia and Iran.
You spoon up a little bit with a spoon made of bone and spread it on fresh toast or on blinis. Blinis are little Russian pancakes made with buckwheat flour.

Caviar. Purists insist that only Beluga Sturgeon, Osetra (or Asetra or Ossetra) Sturgeon, and Sevruga Sturgeon produce true caviar. They also make cheaper caviar from salmon.

Caviar. Although most caviar is from whales, such as the Beluga, you can find cheap variants at your local grocier.
