There are pottery disks which keep the mosture contant in the sugar..

Brown sugar has the tendency to lump and become hard. To avoid this, store in a glass jar or plastic bag in a cool dry place. If is becomes hard, soften it by placing a slice of apple in a plastic bag along with the brown sugar for a few days. You can also sprinkle a few drops of water on it and seal in plastic bag for a few days.
White sugar should also be stored in an airtight container to keep it from lumping together.

Put a slice of bread in there w/ your brown sugar to keep it moist.
THere is also a thing called a "Sugar Bear." It is a little terra cotta thing that looks like a Christmas ornament. You soak it in water, then store that in w/ your brown sugar. Keept is free-flowing.

The best way is to store the sugar in your refigerator. It comes out cool and like fine sand, ready to pour.
