I don't know where you can find a list, but I think that in France it is simply "Oui." After all, the question, "Do you, X, take Y to be your husband/wife .... ?" is a yes or no question, so you might find that in many languages the answer is often a simple "Yes".

Why don't you change your question and ask people to write I DO down for you in their own language.
I'll give you a start:
In Holland the bride and groom say: "Ja, ik wil!"
