You have to understand the meaning of image, or likeness, and what about God we are made in the image of.
We are spiritual beings, we have souls, meaning we will live on after the physical body passes away.
This does not mean we are Gods. Not even angels can claim that. God did not procreate, He created. We cannot even do that, to form someone who is like us (but not exactly us) out of nothing. But He did, and allowed us to continue in procreation, to allow us to join Him in the task of populating the earth, tending and caring for it and the inhabitants of it.
He does this so we can be a part of His plan, not so we can assume that we are Gods ourselves and attempt to take over in our imperfection, and mess everything up.
If everyone recognized that there is one true God, and that we are not gods, I don't think we would be in as much of a mess as we are today. Everywhere on the news we hear of people playing God in their countries, to the destruction of man. We simply are not cut out for absolute power.
We are the created, and there is one Creator, the created cannot tell the Creator what to do, when or how to do things. We do not create, but we do mimic in our own way.

We are physical, God is Spirit. The physical creation was complete in 6 days the 7th being a day of rest to honor the creator.
Now God is creating a Spiritual Family that's what it means to be born again. At the resurrection if we have Gods Spirit dwelling in us then we will be changed from flesh & blood to Spirit (born again)WE will be Gods children & therefore Gods but lesser Gods, under God our Father & Jesus Christ our elder brother & High Priest. This is our purpose in life. But God will not have little Satans in His Kingdom. Go to this website for much for information where you'll here the truth!

If it is said that God created Man in his own image AND that Humans evolved into upright beings from primates, who's to say that God didn't look like Cornelius from Planet of the Apes?

No, we are sinners automatically. God made that statement as soon as Adam took a bite out of the apple. He was told not to and he decided not to listen to God.
Remember God is Love and man will never be what God is - as long as we live here on earth. We will always fall short of God's great glory and never be a so called god.

God made man in His own image, but it's not what people want to think. We are not gods, we are only made in God's image.
God is a Spirit, and we also have a spirit. In that way, we are made in the image of God.

In Lalita Sahasranamam, it is said God has no form but one is manifest in many forms - Eka Aneka Swaroopini -meaning God is the same but takes many forms.
Worship helps in conccentration. To achieve better concentration, an image is needed. We can imagine only what we know. In theprimary, when a child taught, it is shown samples byway of picture or actual thing like ball, cat, dog etc to enable it identify the object.. Likewise to help us concentrate better we form the God as we know. However, as one attains certain level of concentration and meditation, he needs no form at all.

What it means is that our form is similar to God's form, the human being form. That's my interpretation. We are not even close to gods ourselves. We procreate because God told us to be fruitful and multiply, that does not mean we create more gods. God is perfect and is without sin. We, as humans, are so sinful that we are born with sin. The only thing that is saving us from an eternity in hell, is the fact that Jesus died on the cross for our sins. He died for us.

Nope. A picture of me isn't me. Its not even going to go off and start its own family and life. Its a picture, an image.
