There are a number of methods, but personally, I gently crack the egg around the middle, over a small bowl. Next, gently pour the yolk from one half shell to the other, letting the white drip into the bowl.
Continue untill you have only yolk left in the shell.

The yolk is the embro (what becomes the chicken if its fertalized) the white is the embryonic sack which are seperated by a thin membrain

They don't unless you beat em'. To seperate them jiggle the white out of shell carefully, That's how my mamma does it.
