All products are better when used when fresher. Manufacturers need to mark their products so consumers use them when at their freshest as to not be disappointed. If one decides to use it when it is older and they are unhappy they do not have a recourse. (such as asking for refund). A dairy man once told me that most products are good for 2 weeks to a month after their expiration date, but that time limit is built into the expiration date in case the customer doesn't use it immediately.
Even sour cream can go bad...I've had it happen. So if you use most dairy products within a "reasonable" time you should be safe.
Make a coffee cake or something else yummy with the older sour cream - I'll be right over! :]

Because even though it's soured it's not spoiled. That's the next stage. So spoiled and moldy is coming after that expiration date.

So we know when it is best to use. If its past expiration it may be good to anymore or maybe loose its taste and then possibly make you sick specially when you see those little green stuff on it yikes!

because that type of sour can get that "unhealthy" sour that can cause to make you sick.
Just like any other dairy products, it can curddle, and thati s not good.
