Chicken Ritz Recipe
I love this recipe because it's so easy to throw together and takes no time to serve. It's a half hour in the oven and it's ready. It can be prepared a day ahead of time for those busy people, just keep it refrigerated. It's served best with cranberry sauce to the side or just spread on top of it after its cooked..it's yummy!!
2 lbs boneless chicken breasts (as much as you'd like to prepare)
1/2 cup butter, melted (I use one stick for about 4 chicken breasts)
2 packages of ground-up Ritz crackers
4 servings
1. Cut off all unecessary fat from chicken breasts.
2. If breasts are thick, cut in half so you butterfly them.
3. Pound down with a mallet so they're not too thick, but not paper thin either.
4. Dip the breasts in your melted butter, both sides.
5. Dip the buttery breasts into the ritz cracker crumbs, on both sides and press firmly so the crumbs really stick to it.
6. Place on a cookie sheet in oven set at 350* for 15 minutes on both sides.

Easy stuff, mildly healthy.
You need some turkey steaks.
Get some olive oil, little chili powder, Worcestershire sauce, little dark soya sauce and honey. Mix all of these in a mug to make a marinade (substitute anything you don't like but taste as you go and try to retain a balance between spicy and sweet).
Get a freezer bag an put the turkey and the marinade in the bag close it and leave it (while you put your feet up for an hour). Then griddle the meat or shallow fry. Add salad cous cous, be flexible.
Cookings a little like MacGayver, use what you have to hand.

Chicken and Mushroom Quesadillas - you need: a bag of frozen fajita chicken, fresh mushrooms, shredded cheddar cheese, flour or wheat tortillas, a little bit of butter or margarine, and sour cream and salsa. Cook the chicken and mushrooms on top of the stove in a pan sprayed with cooking spray on medium to medium high heat. Butter the tortilla and brown it. Put the cheese and chicken/mushroom mixture in the tortilla. Serve with sour cream and salsa.
They sell packaged stuffed tortellini and ravioli at most grocery stores. You just have to boil them for like 8 minutes and heat up some Prego sauce to serve with it.
I make Tuna Helper or Hamburger Helper when I don't have a lot of time. They're very easy and they're actually pretty good.

Cook some pasta spirals, add salt and garlic. Chop up a packet of Bacon and fry it in a pan with some onions and mushrooms, put a tin of tomatoes into the mixture add some tomato puree if necessary.
Once cooked, drain the pasta and add the sauce, pop into a ovenproof dish and sprinkle with loads of grated cheese.
Pop into the oven till the cheese is melted and you got a nice pasta bake.

Try a crock pot - you throw a bunch of stuff in there, come back hours later, and it's food! One easy recipe: 3 or 4 small pieces of steak (your choice), 1 package onion soup mix, 1 can creme of mushroom soup, 1/2 the can of water, put in crock pot for 5 or 6 hours, and wa-la! Serve with mashed potatoes (instant) and biscuits (canned), or cut up over rice, and it's great. Frozen vegetables are tasty and easy, too.

Easy Tacos
1 lb ground beef or turkey
1 can diced tomatoes w/ green chilies (mild or picante)
1-2 T chili powder
1-2 t each of cumin, oregano, garlic powder
1 Pkg. Hard or soft shells, your choice
8 oz. Pkg. sharp cheddar cheese
Small bag of shredded lettuce
1 bottle Ortega or El Paso Taco Sauce
4 oz. cont. sour cream
Other toppings as desired such as diced green or red pepper, cucumber, guacamole, fresh chopped tomato, onion or scallion.
Brown the meat together with the tomatoes over med.-high heat for 8 min., stirring well to break the meat into small, crumbly pieces. (The juice from the tomatoes makes this easy to do and the meat does not stick.) Add seasoning ingredients and stir to combine. Reduce heat and continue to simmer for 20-25 min.
Meanwhile preheat the oven to 350 & wrap the shells in foil. Warm shells in oven 10 min. If serving both soft and crispy shells, heat them separately.
Pour lettuce and cheese into serving bowls; spoon sour cream out into a smaller bowl. Place shells on serving platter. Transfer meat to a large serving bowl and take all to table for everyone to assemble their own tacos. I usually skip the shells and have a salad topped with sour cream and taco sauce. We make it festive by transferring the taco sauce into a recycled honey bear container so it's less messy to pour and it becomes TACO BEAR! You could substitute salsa for the taco sauce, but we like our sauce smooth, and I wouldn't recommend Taco Bear for salsa.
This is my husband's favorite meal. I like it because cooking the canned tomatoes together with the meat really makes it simple to prepare. It's quick & easy with nothing to chop, unless you want to add extras.
