The key to good chocolate is the type of the cacao beans (the raw ingredient in chocolate) used. All chocolates are not created equal. Many would be surprised at the dramatic difference in flavor between a bland grocery store bar and premium gourmet chocolate. (Godiva isn't premium--sorry)
There are 3 main classes of cacao beans:
Forestero: Low grade, mass produced beans. The make up 85-95% of the annual crop of cacao. This is the junk used by the brands found in most grocery stores.
Criollo: A very premium cacao bean that makes up less than 5% of the annual crop. It is considered a "flavored" cacao because of the complexity of flavor notes found in the bean.
Trinatero: A hybrid between the Criollo and the Forestero. These are also considered "flavored" cacaos.
The brands that use these premium beans (and there are more) are Michel Cluizel, Amedei, Domori, Dolfin, Slitti, Venchi, etc.

The best commercially available year round chocolate that is has a good chocolate taste without the paraffin after taste is Dove's.
Cadbury is about as good, but hard to find except around Easter.
The best gourmet chocolate is from DeBrand's. It is pricey but worth it for special occasions.
