i mix mine in the blender first and then lightly oil the griddle... and as soon as the sides start to bubble i flip them

If you are making your batter from "scratch" ie: mixing flour, pich of salt, levening agent (baking powder/soda) eggs, milk, oil and softened butter, try SIFTING all of your dry ingredients. This will aerate them and aid in producing a fluffier pancake. Even if you are purchasing a store bought mix, sift that as well. Also make sure that you are following the correct recipe on the package, some put the amounts to mix to turn the same item into waffle or pancake mix side by side. To alleviate the burning, turn down the heat, a medium to medium high heat is plenty to turn out golden brown and delicious pancakes. Hope that this gives a little insight to a better breakfast.

use egg whites only, and double the amount called for in the original recipe. i.e., a 3 egg recipe would be replaced with 6 egg whites. Beat the eggwhites in a mixer seperately from the rest of the ingredients till peaks form. Gently fold these into the rest of the ingredients, cook on a 400 degree griddle, and like the lady said, as soon as the bubbles form, flip them ever so gently. Also, you cannot get a light pancake from a mix.

Make them with milk. Then make them using a little butter in the skillet. Sometimes the batter thickens while you are doing the pancakes- just add a little more milk to it and mix. Also when you pour batter in the pan, just pour a little and spread it round by moving the skillet in a circular way. Put the heat down a little if they are burning- means flame is too high.

Sounds like you're combining two mistakes: overmixing (you don't need to beat out every single lump) and too much heat. Turn down the heat, and mix until it's combined. Adding extra egg to the mix also helps with the fluffiness.

i like Krusteaz mixture. I sometimes upload an egg and that i many times use milk or yogurt for component to the liquid. in case you put in an egg you will get something extra like a crepe, no longer severe and fluffy yet very comfortable.

mix it well, and don't add too much pancake mix, it should be somewhat smooth, not watery, but just enuff when you pour it on your fry pan, the stuff will come out smoothly.

do not overbeat the batter. it will be lumpy. also, try adding a little buttermilk instead of milk to the batter.
