Common sugar, usually called "table sugar," is crystallized sucrose. The two major sources of sucrose are sugarcane and sugar beets.
Sugar beets grow best in moderate and cooler climates, sugarcane in semitropical areas.
Sugar was one of the most important exports from the new world during colonial days and even after the formation of the nation.
Juice is squeezed from the vegetable, heated, and allowed to crystallize. The crystals are further processed to a granulated form for table use and "powdered sugar" for pastry use.
Sugar was unknown in Europe until it was imported by the Arab people who colonized Sicily and most of Spain after the Crusades. Until then, Europeans relied on honey to sweeten their food.
"Triangular trade" was made possible by the production of sugar in the Caribbean. Manufactured products were taken to Africa (first leg of triangle), where they were traded for slaves, who were shipped to the Caribbean and trained for plantation work (second leg), having traded the slaves for sugar and its products (rum, molasses, etc.), the ships would head back to Europe (third leg) to sell the sugar products and buy more items to trade in Africa.
Had it not been for sugar and its value in Europe, the slave trade might not have been as lucrative as it was. Ironically, the EU is now the worlds largest exporter of sugar.
