Yes, Jesus would have cursed the fig tree even if it produced coconuts. The whole purpose of this parable was too prove that if you don't do what your supposed to do, you will be cast down, cut off, and remain disconnected from God.

The purpose of a fig tree is to produce figs, not coconuts, not apricots, not acorns. Jesus said that he is the true vine and if any branch does not bear fruit, it will be cut off. (John 15:2)

But that is not the case here, you specifically asked about a fig tree that produces coconuts. Well the answer to this is found in the same chapter of John. In John 15:5b Jesus says that apart from him you can do nothing. He goes on to say that if you don't stay in him, that is, fulfill the purpose that God has willed for you, you are good for nothing but to be thrown in the fire.

the tree could not have produced coconuts. Trees can only produce what God created them to produce.

Jesus obviously knew what the fig tree would do, as He is God and knows everything, and everything except man obeys God in all things.

A tree has no choice but to do what God makes it do. Of all the physical creations of God, only man has been given a choice whether to obey God's commands or not. [ He makes it PRETTY attractive to obey Him, too. . and pretty UNattractive not to (see Revelation chapter 20 - 22)].

It is only man that doesn't obey God. The moon, the sun, the stars, the animals all obey God. Only mankind doesn't.

Jesus was making a point. His point is this: I created you [each individual person] to produce proper fruit (deeds/words/actions/thoughts of obedience to Me and My Word). If you refuse to produce the fruit you were created to produce, you will be thrown into the fire ( the Lake of Fire mentioned in Revelation).

As one wise person put it. "You need to get right with God . . God don't need no more firewood." [pardon the grammar, it was intentional even on the speaker's part who originally said it].
