I graduated from East Carolina, and attended many "pig pickings". There is nothing better than a pulled pork sandwich with that NC vinegar BBQ with coleslaw on top. All the others, Memphis, KC, Texas, do not compare. Lets hear it!

Wrong! North Alabama 'Que is far superior. It's moist and smoky, and not sour. There must be some reason Bama 'Que wins all the big contests. And yes, Texas is way overrated.

It seems to me that the best is what ever you were raised on. I personally was raised on tomato based sauces and still to this day prefer them over all the others, albeit I like my BBQ without sauce.I have eaten BBQ in Memphis, Texas, Kansas City , Georgia, Tennessee, Kentucky,South Carolina and North Carolina and even Ohio and Chicago.As a matter of fact I have eaten BBQ in Toronto as well and they all have good points and are quite tasty in their own way. However I prefer my own BBQ cooked in a wet smoker low and slow . I find that I like maple wood for my choice of wood for smoking with a little cherry thrown in after a couple of hours.

I am from NC, and ate at a Pig Pickins not too loong ago. Mmmm... good. Last week I was in Kentucky and tried BBQ there. Very different. I've tried BBQ in a few states, and agree- NC has the best. But the eastern part of NC has different BBQ than the western. It's all about the sauce.

I live in NC and they had bbq wars in the newspaper here about a year ago. They traveled all across the country and ate bbq everywhere they went. The winner was a friend of mine. An old army mess sergeant named Elwood Kennedy. He makes his own sauce and it has to be the best I have ever tasted in comparing vinegar based sauces. However, I am from the west coast and prefer the tomato based sauce recipe I picked up in college cooking class

I've eaten barbeque from Austin to Memphis to St. Louis to Santa Ana to Santa Fe to Kansas City. They all have their merits. But for pig, that magical, wonderful animal, NC barbecue is the best. It's good hot and fresh. It's good cold. It's good on a bun. It's good defrosted.

The key is that the sauce is vinegar-based. Too many tomato-based sauces just don't keep well, even on your plate. (But I can skip the slaw. NC-style slaw has too much mayo and is too runny).

Now beef, that's another thing. Then I have to go with Texas pit barbeque. Pork ribs? St. Louis. But straight pork? Nothing beats a NC pig pickin'.

There was a place outside Houston that I enjoyed. Nothing like the beef ribs and polish sausage in our red bbq sauce. I asked what was that helicopter doing outside. The waitress told me it was taking a load back to a Louisiana offshore oil rig!

There's all kinds of styles of bbq. A lot of it bad. I remember my buddies from the east wanted their pork, but me... I get hungry for the combination plate with the Texas toast, beans, cole slaw and a fried onion ring on top. Hickory smoke beats mesquite and I don't care if it's bad for me or not.

Texas BBQ all the way. Try The Salt Lick in Driftwood, Texas. Look it up online and you will see.
