There is a reason that this recipe is called "Best" . Try it and you will also agree.

Best Banana Bread

1 ¾ c. white flour
2 tsp. baking powder
¼ tsp. baking soda
½ tsp. salt
1/3 c. white sugar
1/3 c. brown sugar
1/3 c. butter, softened
2 eggs, slightly beaten
1 c. mashed banana, 2 lg.
½ c. walnuts, chopped
1 tsp. vanilla
1 tsp. cinnamon
1/8 tsp. cloves
1/8 tsp. nutmeg

Grease an 8x4 loaf pan. Preheat oven 350 degrees.

In a large mixing bowl, sift together flour baking powder, baking soda, salt, sugar and spices. Add butter, eggs, nuts, and mashed bananas. Beat until well blended.

Put batter into loaf pan and bake about 1 hour, or until a toothpick inserted in the center of the loaf comes out clean.

Best Banana Bread
2 cups sugar
1 cup (2 sticks) unsalted butter, at room temperature
6 very ripe medium bananas or 4 large, mashed
4 large eggs, well beaten
1 tbsp. lemon juice
2 tsp. grated orange rind
1 1/2 cups cake flour, sifted
2 tsp. baking soda
1 tsp. salt

Preheat oven to 350 degrees F. Butter two 9-x-5 inch loaf pans.
Cream the sugar and butter until light and whipped-creamy. Add the bananas, eggs, lemon juice and orange rind until blended.

Sift together the dry ingredients and fold into banana mixture until mixed together. Pour batter into the prepared pans. Bake for 45 - 55 minutes, until a toothpick comes out clean in middle and edges pull away from pans.

Cool loaves on racks for 30 minutes before removing them from pans.
Makes 2 loaves of banana bread. This banana bread freezes well.

VERY BANANA BREAD

1/2 cup butter, room temperature
1 1/3 cup sugar
2 eggs
2 tsp. Myer's rum banana liquor
1/4 cup banana yogurt (Banilla) or buttermilk
1 tsp. banana, almond or vanilla extract
2 cups flour, sifted
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup ripe bananas, mashed
1 1/2 cup chopped pecans or walnuts

In the bowl of an electric mixer, cream together butter and sugar until it becomes light and fluffy. Add eggs, one at a time, beating after each addition. Continue to beat until fluffy and light.
Combine liquor and extracts. Sift the dry ingredients together and add half to batter. Add buttermilk or yogurt, extract and liquor, then remaining dry ingredients. Add mashed bananas and beat one minute longer.

Stir in chopped nuts.

Grease and flour several loaf pans.

Bake at 350F degrees until toothpick inserted in center comes out clean.

1 cup white sugar
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3 ripe bananas

Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8x4 inch loaf pan.
In a large bowl, cream the shortening and sugar. Sift in the flour, baking soda and salt. Blend in the mashed bananas. Pour batter into prepared pan.
Bake in preheated oven for 60 minutes, or until a knife inserted into center of loaf comes out clean.

1 cup smashed bananas
1 cup sugar
1/2 cup soft margerine or butter (1 stick)
1/4 cup milk
1 tsp vanilla
2 eggs

Preheat oven to 350 F and beat above ingredients together for 1 minute.

2 cups flour
1/2 cup chopped nuts
1 tsp baking soda
1/2 tsp salt (optional)

Add dry ingredients to above mixture and stir just until moistened. Pour into greased loaf pan. Bake 50 to 60 minutes. Cool 5 minutes before removing from pan.
