Just for teaching them a lesson, I would pick somebody else.
But ok, ok, the right thing to do is not that. First get them all togehter (preferably in a public place where they would be embarassed of making a scene). Talk to them and tell/show them how this is affecting you. Tell them that this is supposed to be the happiest day of your life and your best friends are fighting with each other! Tell them that they are making you feel really bad for having to choose one (that if you could choose them all you would, because you love them all the same!), and that they're ruining it with their behavior! I think that with that (and if you can shed a tear or two), they should regain their senses.
After that, when they apologize to you for giving you such a hard time (hopefully), you make them promise that they will behave and stop fighting. Finally ask each one of them to say out loud who they think should be the maid of honor and why (but they're not allowed to say their own names!). In that way you're forcing them to get rid of their selfishness and exercise some selflessness.
I know, it's like dealing with kids, but girlfriends can get very ridiculous about things like this.

The bridesmaids do NOT get to pick who is the maid of honor; the bride makes that choice. You should make a choice, preferably your sister, if you don't have a sister or have more than one, you'll have to choose the person you are closest to.

Pick one and end it. Thats the best thing you can do. I only had a maid of honour at my wedding, no bridesmaids. I picked my best friend from high shcool and she told me one night she went out with some of our other friends, they were all b*tching that she was in the wedding and they werent when they should have been maid of honour. I later told them after hearing this that its my wedding and my choice to make, not theirs. If they wanted to continue to fight then they were welcome to skip the wedding all together becuase I dont need them to ruin my day for me.

If you don't NEED a maid of honor, simply go without! At the ceremony, line them up by height, with the tallest standing closest to you and holding your bouquet, etc. Make it clear it is a strictly objective and/or aesthetic decision. Secondly, tell them to cut it out and grow up!

You need to kindly remind them that it's your day. I had a bridesmaid who didn't get it and was just rude to everyone. I didn't know she was so capable of being rude and I eventually asked her to not be a part of the wedding. Pretty sad, since we've been friends since age four.

do you need a maid of honour? because if you don't need one, they would have to find something else to fight about (and they will)
try and get your team alltogether for a pub night or a spa outing or something where you can all just relax for a few minutes and take a deep breath
