are there any healthy microwave recipes out there? we also have a crockpot on the truck

great response so far and we do have a fridge with a freezer in it...we've been doing alot of bbq so far but that gets old after awhile

smart ones frozen food are healthy, also lean cuisine(the wife would probably enjoy these more) and lean pockets and hot pockets are filling and pretty healthy! also try pasta and rice you can microwave!

Not to sure about the micro, but hubby uses the crockpot in the truck all the time. He'll stop at a wally world and buy a small roast and a bag of frozen fresh veggies, throw it all in the pot with a cup of water and some salt and pepper and take off down the road. You can do the same thing with chicken breast and those baby carrots. Throw a small bag of small soup noodles in for the last hour or so and there you go! Both of those cook on low for 6-8 or high for 2-4 depending on the size of the meat. The carrots take longer tho. Micros are great for snacks like popcorn or heating cans of soup. Hope this helps!! The possibilities are endless with the two appliances tho. Have fun! I wish I was still out there. Things were a lot better then :)

The problem with microwaves is that it dries out meat when you cook it. The problem with trucks is that you don't have enough room to store good stuff.

Something I did when we drove for Prime was microwave chicken breasts in water, to keep it moist, with various spices. We had a few stock spices that we kept in rubbermaid containers because the original packaging sometimes broke or the lid came off it if fell. The water can then be used with minute rice. Fish comes out kind of funny in a microwave, but it can still be pretty good.

We have a microwave steamer that steams fresh vegetables which is the best way to cook veggies. It also cooks rice.

Most of the "hamburger helper" dinners are microwaveable. We almost never used hamburger. We cut up a steak, a pork chop, or used sliced polish sausage.

My hubby (the guy who carried a bowflex bungeed next to his loadlocks) says the best thing truckers can do is park at the back of the lot and do a few laps around it, as long as it's safe to do so. It's possible to bring a few weightlifting things like the plates and bars, without taking up too much weight. He also says to skip the buffet, even if it's easier because people always eat too much.

CRISPY BREAD CUPS
A sumptuous bread delight!! These tasty calcium rich cups can equally work well as appetizers to a main meal.

Baking Time : 15 to 20 mins.
Preparation Time : 15 mins.
Baking Temperature : 200°C (400°F).
Cooking Time : 25 mins.

Makes 8 pieces.
For the toast cases
8 slices whole wheat bread
3 teaspoons low fat butter
For the filling
1½ cups Green Giant Niblets Sweet Corn
2 tablespoons chopped onions
2 tablespoons chopped capsicum
2 teaspoons finely chopped green chillies
1 cup low fat milk
1 tablespoon cornflour
1 teaspoon oil
salt to taste
For baking
4 teaspoons grated cheese
For the toast cases
1.Remove the crust from the bread slices.
2.Wrap the bread slices in a muslin cloth and steam them for 5 to 7 minutes in a pressure cooker.
3.Roll out a little and press into the cavities of a muffin tray which is greased with butter.
4.Brush with melted butter and bake in a hot oven at 200°C (400°F) for 10 minutes or until crisp.
For the filling
1.Heat the oil in a non-stick pan, add the onions and sauté till they are golden brown.
2.Add the capsicum and green chillies and fry for 1 minute.
3.Add the corn, milk, cornflour and salt and cook till the mixture thickens. Keep aside.
How to proceed
1.Fill a little mixture in each toast case, sprinkle cheese on top. Bake in hot oven at 200°C (400°F) for 5 to 10 minutes or until the cheese melts.
2.Serve hot.

You can definitely alter some recipes to be microwave ones, although meat usually isn't as good. Veggies can be steamed in the micro and now you can even buy frozen veggies in their microwavable pouches already. I don't know if you have a fridge or anything but weight watchers, lean cuisines, and healthy choice frozen meals are always good. You can also just buy frozen meat, like chicken breasts, pot roasts, etc. to do. For your crock pot, I know there are crock pot meals out there but I haven't been impressed. These you would also find in the frozen food section. Also, I wouldn't avoid dried soups you can add hot water to, or even just soups that are microwavable! Soups (no-cream) are usually pretty healthy. It all comes down to doing fresh as much as you can and reading labels for the rest. Your quest sounds like an awesome one, good luck!!

There are some great cookbooks on micro cooking...1st thing I would buy is a dome ..if you heat up food it makes it taste sooo
much better I also use it for all tv dinners. They sell for about $3.00 @ target. FYI ,digornos has an excellent micro pizza in thick or thin crust. As far as healthy with the dome you can pre-cook and heat up its really great.

Stay away from hot pockets and pot pies, you are better off with a big Mac. Try the healthy frozen lean cuisine type things. Also, crock soup or make chili at home, freeze and crock on the road. You can make all kinds of stuff at home, freeze, and then nuke or crock on the road. It could thaw in a cooler and be ready whenever.

This is the best Meatloaf recipe for the crock pot (and a good pork chop recipe after):

Melt-In-Your-Mouth Meatloaf (Crock Pot)

2 eggs
¾ cup milk
2/3 cup seasoned breadcrumbs
2 tsp. dried minced onion or Lipton onion soup mix
½ tsp. salt
½ tsp. rubbed sage
1½ lbs. ground beef
¼ cup ketchup
2 Tbsp. brown sugar
½ tsp. ground mustard
½ tsp. Worcestershire sauce

In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well (mixture will be moist). Shape into a round loaf: place in a 5-qt. Slow cooker. Cover and cook over low for 5 – 6 hours or until a meat thermometer reads 160°.

In a small bowl, whisk the ketchup, brown sugar, mustard, and Worcestershire sauce. Spoon over the meatloaf. Cook 15 minutes longer or until heated through. Let stand for 10 – 15 minutes before cutting.

Golden Mushroom Pork & Apples

2 cans Campbell’s Golden Mushroom Soup
½ cup water
1 Tbsp. brown sugar
1 Tbsp. Worcestershire Sauce
1 tsp. thyme
4 large Granny Smith Apples, sliced
2 large onions, sliced
8 boneless pork chops, ¾” thick

Mix soup, water, brown sugar, Worcestershire and thyme in slow cooker. Add apples*, onion and pork. Cover and cook on low 8 to 9 hours or until done.

* After experimenting, I decided to add the apples after cooking for 4 hours because my family prefers the apples to be a little harder than if you cooked them 8 hours.

There are loads of dinners made for microwaving

Also, most food products will have microwave instructions.

yahoo groups has a crockpot and probably a microwave recipe group as well. I get crockpot recipes daily in my emails.
