here is a great waldorf salad recipe mmm


Waldorf Salad

3 or 4 apples, unpeeled, cut from the core, and chopped into bite size pieces (about 3 cups)


1 tablespoon lemon juice

1/3 cup raisins

2/3 cup chopped celery

1/3 cup walnuts (optional)

1/3 cup helmmans mayonnaise

1 tablespoon sugar

Don't bother peeling the apples unless their skins are really unattractive. Cut up 3 or 4 of them, until you get about 2-1/2 or 3 cups of chopped apples. Sprinkle the lemon juice over the apples. The acid in the lemon juice prevents the apples from turning brown. The raisins will taste best if you plump them first. Do this by measuring them into a cereal bowl and adding enough warm tap water to cover them completely. Allow them to sit for a few minutes, absorbing the water, and softening up. Drain them very well when you need them. I actually squeeze them to make sure they are very dry. Chop up the celery, it should take about 2 stalks or so. I add black walnuts because I get them for free, but you can use regular walnuts or omit them completely if you don't have any handy. Mix everything together in a medium sized bowl with the mayonnaise and sugar, coating all of the ingredients with the mayonnaise. It is now ready to serve, or you can chill it overnight and serve it tomorrow instead. This is so crunchy and chewy, it is perfect contrast for a meal which is soft, or easy to chew. This recipe serves 6.

Favorite vegetarian take out is Ma Po tofu. Favorite vegetarian meal fixed at home is Eggplant Parmesan.

Eggplant Parmesan

Slice eggplant into 1/4 inch slices. Place in colander and sprinkle with salt to draw out the excess moisture. Rinse well with water after one hour, and pat dry. Place eggplant into flour, then egg whites scrambled, then bread crumbs. Place on greased cookie sheet and bake at 450 degrees for 10 minutes, turning over after 5 minutes. Then when all the eggplant is cooked assemble the parmesan in a casserole. Layer marinara sauce, eggplant, mozarella cheese, and sprinkle with parmesan cheese. Keep layering until all the eggplant is used up. Make top layer sauce which is sprinkled with parmesan cheese. Bake at 350 degrees for 30 minutes.

mughlai shahee paneer

Ingredients:
250 gms. paneer (cottage cheese)
3 tbsp. ghee or butter
1 onion chopped into strips
1/2" piece ginger chopped fine
2 green chillies chopped fine
4 tomatoes chopped fine
2 cardamoms crushed
1/4 cup beaten curd
1/2 tsp. red chilli powder
1/2 tsp. garam masala
salt to taste
1/2 cup milk
2 tbsp. tomato sauce
To garnish:
2 tbsp. grated paneer
1 tbsp. chopped coriander
Instructions:
Chop the paneer into 2" fingers.
Heat half the ghee. Add onion,ginger, green chilli and cardamom. Fry for 3-4 minutes.
Add tomatoes and cook for 7-8 minutes, covered.
Add curd and cook for 5 minutes. Add 1/2 cup water and cool.
Blend in a mixie till smooth.
Heat remaining ghee, add gravy and other ingredients except milk and paneer.
Boil to get a very thick gravy.
Just before serving, heat gravy, add milk and paneer fingers and boil for 3-4 minutes.
Garnish with chopped coriander and grated paneer.

Italian Baked Zucchini Casserole

1 lg. zucchini, unpeeled, washed and sliced into 1/3" slices
2 jars of your favorite prepared pasta sauce (a red sauce)
2 pkgs. (12oz. each) provolone cheese, either grated or torn in pieces if whole
2 cups Italian bread crumbs
3 eggs, well beaten

Take zucchini slices and dip into beaten eggs, then into bread crumbs; fry the zucchini in a pan of hot oil, about 1 & 1/2 to inches deep; brown until crispy. Remove zucchini from oil and place on paper towel-covered platter. Grease a 2 quart casserole dish and place a layer of fried zucchini, then a layer of pasta sauce, then a layer of provlone cheese, and continue layers in this manner til you have 3 layers, the last being sauce. Cook in 350-degree oven for 20 minutes, add last layer of provolone cheese on top, and cook 10 minutes longer. Let stand for 5 minutes and slice into squares; serves 4 to 5.

16 oz uncooked penne pasta
marinara sauce
broccoli
shredded carrots
mushrooms
black olives
mozzarella cheese

Combine above ingredients (except the cheese) together in a casserole dish. Cover with tin foil and bake at 425 for 45 minutes. Remove tin foil, cover with 2 cups shredded mozzarella and bake uncovered for 10 minutes.

VEGETARIAN BEANS AND RICE

4 tbsp. olive oil
12 slices Morningstar Farms breakfast strips, cut into thin strips
1/4 c. Bacos
1 c. onion, chopped
1 c. chopped green peppers
1 c. sliced celery
1 lg. clove garlic, minced
2 c. crushed tomatoes
4 pkgs. golden George Washington broth
1 tbsp. vegetarian Worcestershire sauce
1/4 tsp. hot sauce
1 tsp. crushed thyme
2 bay leaves
1 c. long grain rice
1 (19 oz.) can cannellini beans

Saute breakfast strips in oil, add Bacos, saute for 3 minutes. Add rice, onion, green pepper, celery, garlic. Saute 3 minutes. Add tomatoes, Worcestershire sauce, hot sauce, thyme, bay leaves, rice. Stir golden George Washington broth into 2 cups water. Add to rice mixture. Cook on medium high, covered for 15 minutes. Remove bay leaves, add beans. Cover and cook 5 minutes longer.
