Yodasan, I grill Salmon, Blue fish and MAcarel alot and the best combination I have found with the Salmon that works on all taste buds is this. I get Celtic salt, not just sea salt but Celtic(try a major health food store). I take 1 cup of the salt and add 1.5 tablespoons og powdered ginger to it. Then 2 tablespoons og granulated garlic. I brush oin onto the steaks and then sprincle the mix onto each one on both sides. I grill them at medium heat so they don't dry out. The taste is awsome! you can play with the recipie a little to see how it agrees with your taste and take it from here. I usually grill the steaks no more than 6 minutes. I never leave them! I brood and turn them. 3 mn on one side. 3 mn on he other. I did 300 lbs of the fish for a wedding. When it was over there was only 2 lbs left. I was shocked and happy that it was good! Try it and you'll like it.

Put a couple of pats of butter, Top with some lemmon juice, and a little black pepper. Wrap in aluminum foil with about an 2.5inches of space b/w the salmon and the top of the aluminum foil. Cook, and then top with capers.
Now if it were me, the salmon would be blackened. Which is basically pan fried with lots of butter and tons of cajun seasoning. But I wouldnt be serving baby potatoes and watercress salad either. I would serve Red Potatoes Boiled in a pot loaded with cajun seasoning and butter, and a spiniach salad side salad with strawberries, bacon, pecans, parmesean and balsamic vinegrette dressing. This is a delicious salmon recipe:
Barbecue Roasted Salmon
1/4 cup pineapple juice
2 Tbsp fresh lemon juice
4 - 6oz. salmon fillets
2 Tbsp brown sugar
4 tsp chili powder
2 tsp grated lemon rind
3/4 tsp cumin
1/2 tsp salt
1/4 tsp cinnamon
Cooking spray
Lemon wedges (optional)
Combine first 3 ingredients in a ziploc plastic bag, seal and marinate in refrigerator 1 hour, turning occasionally.
Preheat oven to 400°F. Remove fish from bag; discard marinade. Combine sugar, chili powder, lemon rind, cumin, salt and cinnamon in a bowl. Rub over fish. Place in an 11x7” baking dish coated with cooking spray. Bake at 400°F for 12 minutes or until fish flakes easily when tested with a fork. Serve with lemon, if desired. Serves 4.
Per serving: 314 calories, 14.7g fat, 35.3g protein, 9g carbohydrates, 1g fiber, 111mg cholesterol, 1.5 mg iron, 405 mg sodium, 30 mg calcium. (Recipe from: Cooking Light, May 2001, p. 210)

I always grill salmon steaks in foil,adding butter or olive oil to prevent sticking.I also add fresh onion and green pepper slices and usually a slice of lemon. this last time i found myself w/o lemon,but had some Korean soy ginger marinade,so i covered the steaks generously with that. The outcome was a moist flaky steak that had the best flavor of any salmon i've had anywhere.(or maybe i was just proud ha ha) hope that helps. good luck!

Salmon Steaks With Hoisin Glaze
1 tablespoon fresh orange juice
2 tablespoons hoisin sauce
2 teaspoons honey
4 salmon steaks (each 8 to 10 ounces and 1 inch thick)
Coarse salt and ground pepper
Heat broiler. In a small bowl, whisk together orange juice, hoisin sauce, and honey.
Rinse salmon steaks, and pat dry. Season both sides with salt and pepper.
Place steaks on a rimmed baking sheet. Brush generously with glaze.
Broil salmon about 4 inches from the heat source, basting once, until opaque in center, 10 to 13 minutes.
Tips: Cover your baking sheet in foil for easy clean-up.

Dill is good. Red pepper or a cajun blend is nice too.
I used to marinade the steaks in Teriyaki (sp?) sauce and pineapple juice.
Growing up, my mother used to mix mayo, ketchup, soy sauce, and dried onions, spread it on the fish, and bake it (granted, we did this with fillets, not steaks)
Rubbing the steak with equal amounts of brown sugar, white sugar, and salt, let it marinade overnight, rinse in the morning, and cooking gives a nice sweet and salty flavor, but you have to cook slowly with this method or the fish can get a burnt flavor from the sugar.

Don't over do on salmon. You can just put some lemon juice on it and or add some salt pepper. I like to stuff it with fresh crab and small shrimp

Instead of french dressing, why don't you try making a sauce of sour cream and fresh chopped dill with salt and pepper to taste. Or to lighten up on the fat, use plain yougurt instead of sour cream
