i worked at KFC. an egg and a milk to about what you'd use to make french toast. 1 cup. dip the meat into the egg/milk, let it drip off a little, dump it into a mixture of flour, or corn flour mixed with salt and pepper and whatever other spices you'd like...don't let it sit too long. put it into hot grease pan with enough oil to cover half the breaded meat...cook until done each side...don't try to cook on the 1st side again. trick is for the oil to be hot enough to cook the breading and meat at once. OH FORGOT, WHEN YOU DUMP THE MEAT INTO THE FLOUR, COAT WELL EACH SIDE AND PRESS IT FIRMLY INTO THE FLOUR

First dredge it with flour, dip in a mixture of milk and egg, then roll it in your breading. Place it on wax paper or parchment paper, cover and place in the refridgerator for at least half an hour, take it out and place in frying pan with a good amount of oil or margarine, fry on a low heat for about 3-5minutes on each side or until golden brown.
Enjoy.
PS: To make your breading really yummy, add parmesan cheese and onion powder.

I use an egg, spice, milk better before rolling in the bread crumbs.
I placed the breaded items on a rack and let them dry for about 2 hours in the refrig. Then I cook or wrap to be cooked later.
This what I was told at a meat market to do when I make chicken fingers. It seems to work for me.

First dredge it in seasoned flour then an egg wash made up of egg and water., then seasoned bread crumbs, fry it in 2 tbs of olive oil, do not turn until browned. 2 or 3 minutes on med. heat. This way the breading will stick to it. then turn and cook until done inside. about 2 to 3 minutes more depending on your stove

Ingredients :-
For the rolls :
Maida - 2 cup
Eggs - 2
Pepper Powder- 1/2 tsp
Salt - to taste
Water - as needed
For the filling :
Fish cut into small pieces-1/2 kg
(Use fish which has less bones.If you can use any fillets ,that’ll be well and fine.I’ve used Tilapia fillets for this one)
Grated ginger - 2 tsp
Chopped Garlic - 2 tsp
Chopped Green Chillies - 4
(Use it according to the spice level)
Chopped Curry leaves - a few
Chopped Onion - 1 medium sized
Chopped Tomato - 1 medium sized
Red Chilly Powder - 1 tsp
Pepper Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Chopped coriander leaves - 1tsp.
Salt - As needed
Other Ingredients :
Bread Crumbs - As needed
Oil - For Deep Frying
Method:-
To Prepare Filling:
Take a pan with 1/4 cup of water in it.Add fish pieces along with salt,1/2 tsp of ginger,1/2 tsp of garlic and 1 chopped green chilly.Cover it and cook till done in medium heat.If necessary ,add water little by little.Drain it and allow it to cool.
When it is cooled well,seperate the bones from the fish pieces.Now the boneless fish pieces has to be chopped fine.(This step can be made easier if you use boneless fish fillets)Keep aside.Heat oil in a pan,and add chopped onion,chopped curry leaves,rest of ginger, garlic,and green chillies into it.Saute it till onions turn translucent.Stir in turmeric powder,pepper powder and red chilly powder into it.Now add chopped tomato and salt and saute it till dry.Mix in the cooked fish and coriander leaves into the prepared masala.Simmer it for 2-3 mts stirring continuously.Note that the filling should be made dry.

Here's what I do, for really crispy chicken or tenderloins: I dip the meat first in plain flour, and spoon it on there so it's really coated, then I dip it in egg mixed well with a little water, then I coat it again with flour mixed with cornmeal and salt & pepper. Stays on, tastes great, and it's nice & crispy.

the answer to that would be a process called dredging...what you do is place what you want to batter in any kind of liquid you chose to batter with...at my work to fry chicken and such we use regualr water...but you could use milk or egg wash..whatever flots you boat..then all you do is place your meat or other such iten in the liquid you chose...then into the batter..and if you want extra coating repeat the process then the coating sticks..

Roll in flour seasoning, drop in water, and then roll in flour mixture again and deep fry.

YOU CAN ALSO MAKE A BATTER OF FLOUR, EGG AND MILK AND SOME SPICES AND BEAT TOGETHER. BATTER SHOULD BE ON THE THICK SIDE, COAT THE MEAT, FISH OR VEGGIE AND PLACE IN HOT OIL.
