Anything containing Citric Acid. There are compounds in fruits that are sour that will help to stop cell walls from breaking down and letting oxidation occur. The thing to remember is, if it tasts a little sour like; lemon juice, lime juice, sprite, anything containing citric acid, you'll be fine. Experiment to see what goes well with the bananas. If you are looking to make the friut taste good try tossing the banana slices with a little balsamic vinigar.

Anything that covers the piece of fruit with a very thin coat will do. It doesn't even has to be acid. You could just wrap them up in plastic film (of course, that's for the rest of the banana, not each slice!)

Anything that has citric acid (orange juice, etc.) will work. There's a clear, tasteless additive you can buy in food stores that will do this (can't remember the name).

a bit of rice vinegar or apple cider also can keep bananas from turning black.
