Texas Breakfast Casserole

Ingredients:
1 Can Crescent Rolls
1 Pound Sausage - cooked and drained
Fresh Mushrooms -- sliced
3/4 Pound Monterey Jack Cheese - grated
6 Eggs -- beaten
1 Can Cream Of Onion Soup

Preparation:
Line a 13x9 inch Pyrex dish with rolls, sealing perforations. Cover with sausage, mushrooms and half the cheese. Mix eggs with soup and pour over casserole. Sprinkle remaining cheese on top. Chill overnight. Bake at 350 for 1 hour. Note: For variation, you can use cooked, crumbled bacon or bite-sized pieces of ham instead of sausage.

Crab Quiche

6 oz. imitation crabmeat (you can use real crab, too)
10 inch pastry shell
4 oz. fresh mushrooms, sliced (optional)
8 oz. (2 cups shredded) Swiss or Mozzarella cheese
1 Tbsp. Flour
4 Eggs beaten
1½ cups milk
1 Tbsp. lemon juice
½ tsp. salt
¼ tsp. Worcestershire Sauce

Follow preparation directions on pie shell box and then bake pie shell for 6 minutes at 375°F and set aside. Cut crab into small pieces and combine with mushrooms, cheese and flour. Pour that mixture into pie shell. Beat together eggs, milk, lemon juice, salt and Worcestershire Sauce. Pour over cheese mixture. Bake at 375°F 40 – 45 minutes or until knife inserted in center comes out clean. Let cool at least 5 minutes before serving.

If you don't like crab, I've also made this with bacon and mushrooms. It's a delicious quiche recipe.

Favorite breakfast is Multi grain pancakes with Log Cabin syrup(sugar free), Canadian bacon, and Egg Beaters. Only have this maybe 2 or 3 times/year. Usually just have Cheerios with non-fat milk and a cup of decaf coffee with non-fat creamer.

I prefer cold pizza left over from the night before. Yum! I once went to a B&B on Thanksgiving Day and they had a large family dinner there that day. They said we could stay with them that night but they would not fix breakfast the next day. That next morning they felt bad about not fixing us breakfast but offered us all of the leftover homemade pie we wanted. It was a great breakfast!

I don't eat breakfast..... But when I go out to lunch or dinner I usually order breakfast food. "Breakfast" in the afternoon or evening... (sometimes middle of the night) always the best! Depends on what mood I'm in, but typically the usual fair.

I like scrambled eggs with ham, green pepper & onion.
Pancakes with blueberries ... or choc chips .. or bananas.
Most of the time I eat a big bowl of granola (from a huge 10 pound box that I bought at Sam's Club)!
Bagels are good too, with vegie cream cheese.
Best of all is homemade French toast with strawberries or raspberries, syrup & whipped cream. .. yum..
(better save that one for the weekends because I'm definitely NOT going to work after that one!)

My daughter gave me this recipe and it is so easy to make and delicious.

Ham and Potato Omelet

1-12 oz. pkg. loose pack frozen hash brown potatoes
¼ c. oil
1-4 oz. pkg. sliced fully cooked ham, cut into ½” strips
1 medium onion, chopped
6 eggs
½ tsp. salt
1/8 tsp. pepper
1 pkg. frozen whole kernel corn
2 TB. margarine
1 c. cheddar cheese, grater

Heat oil, fry potatoes about 5 minutes or until tender. Stir in ham and onions. Continue frying additional 5 minutes. Add corn and margarine. Beat eggs, add salt and pepper. Pour over ham and potato mixture. Cover and cook over medium heat until eggs are set and lightly browned on bottom, about 10 minutes. Sprinkle with cheese. Cut into wedges or squares.

Right now, something I love because it's quick but with protein and carbs and yummy, is deli turkey rolled up in a tortilla. Dipped in Honey Mustard sauce. That gets me up and going in no time, and the honey mustard helps make me thirsty and drink more water.

My favorite breakfast is pancakes with sausage and maple stuff...but I haven't had that in forever. I have been having a bowl of cheap cheerios...
